Shaeyna--If you're having trouble with dairy (you say you're lactose intolerant), have you ever tried using ghee? It's essentially pure butter fat with the dairy proteins removed. From what I've read, most people with dairy allergies can do okay with ghee.

Also, try saving up that leftover beef and bacon grease for later use. It really comes in handy when you're frying up a piece of lean meat or veggies in the pan! I keep mine in a small metal container (originally the milk frother can for my espresso maker) in the fridge. I can set it directly on the stove burner to bring it back to a liquid state before I start cooking. I pour what I need into the pan and put the can back in the fridge.

That is the case with me, and I'm both lactose intolerant and get skin reactions to dairy.  Ghee doesn't make my stomach growl or break me out.

Plus I think the great thing about ghee is that you don't need a lot of it. It holds up well in a frying pan (or under a broiler, or over charcoal), and the taste is stronger than butter. I get mucus buildup from dairy (not as pronounced with butter) but have no trouble with ghee either. I use it in damn near everything, lol!

I'll work on starting up the journal. As for fatty meat, guess I think that, for example, ground beef is fatty (even with the fat poured off). Bacon of course - and that is starting to disgust me as the level of fat just seems so over the top.

You might need to ease into eating more fat from meat if it disgusts you.  I used to gag trying to eat fat (I'd even leave the ends off the bacon).  If it helps, bacon actually isn't as fatty as it seems - a lot of it gets cooked off.  Same with ground beef.  It takes some time, but your tastes really will change.  I kind of had to cut fat from steaks into teeny tiny pieces and swallow them whole at first.

Mark's Daily Apple blog has a bunch of primal recipes on it that are easily adapted to paleo - you might try that site or the recipes subforum on here if you need some ideas.  I stay away from breading anyway, just from personal preference.

Just for the record, I think most of us here consider bacon to be about the right level of fattiness, though commercially cured bacon is not technically paleo.  The amount of fat can be varied a bit by cooking the bacon more crispy or less crispy.  Most ground beef is quite lean if you cook it well done and pour the fat off.  I start with 75% lean ground beef, and I try to cook it to pink rather than grey in the middle.  If I'm hungry I will pour some of the fat over the beef patty on the plate.

I do use grass finished ground beef, as I find the fat more palatable.  I also use the left over fat to fry mushrooms and onions, so the fat won't be wasted.

Since you no longer feel hungry, it sounds like you don't actually need this advice any more, but I figured I'd mention it for the benefit of any lurkers.

I can only ask you this - What about FAT don't you understand?!  Fat burns fat.  Lean meat is deadly!  Ka Ka!  Go and get a good piece of nice fatty steak and just throw it on a hot cast iron griddle and cook it just between rare and medium rare and you have a piece of meat that is nutritious and gloriously tasty!  Throw in some other tasty Paleo type veggies and you have a meal!

I don't understand how anyone could be hungry or "starving" on this diet.  With such variety, free cookbooks from Robb Wolff, tons of information, and the ability to be as creative as you like - I just don't understand.  My advise......EAT MORE!

Look, y'all have been Paleo too long and forget the switch. Folks, when you switch to Paleo and chop grains (especially wheat) out of your diet, you are going to be starving for the first month or two. You'll be twitchy, and thinking about snacking all the time, and thirty minutes after eating you'll be hungry again. Regardless of how much fat you eat with your meal. It is an adjustment. First, the body is used to self medicating when on grains. snacking, that sort of thing, makes you feel good, and the mind associates that with snacking, and so you want to snack. Secondly, your metabolism is changing, but it takes the body time to adjust. So just accept that eventually you'll stop being so hungry (and in fact fasting will become very easy), but in the short term, just snack all the time. Eggs, nuts, fruit, whatever.

Whoa.  I didn't have that happen.  Fatigue, yes.  Cravings, yes, especially the weird feeling of wanting something and not quite knowing what.  Hunger?  Not once I started eating enough.  I snacked at first, and don't see a problem with it - in fact I think it's a good idea to have paleo foods readily available as snacks when you get started.

If you're starving all the time (like stomach growling hungry, not just wanting to eat), something probably needs to change with your diet, whether it be eating more overall or changing up macronutrient ratios to get more fat and protein with fewer carbs.  The first week or two is pretty rough for a lot of people, but months of hunger?  There's no way I would have been able to stay paleo if that was the case for me.  Not to say that it doesn't happen, but I don't think it's common to be really hungry once you get the hang of things.

If you get hungry, you eat.  If you're eating a lot and are STILL hungry, it's probably time to start really upping the fat, beyond what might feel like a reasonable level at first.

edit: I just saw on another thread that you're a type I diabetic and think there's some sort of fat fetishism going on around here.  Your responses to starting paleo (hunger, etc.) might be a little different because of the diabetes, although I've seen stories from several people about being able to gradually reduce their insulin dosage.

 Also, the reason for recommending more fat is that so many people tend to try to cut both carbs and fat at the same time, resulting in a diet that is too high in protein and/or too low in calories.  The result can be feeling hungry all the time, low energy, and generally feeling like crap.  If what you're doing is working for you, great! 

However, most people who are new to paleo don't need encouragement to eat more vegetables and lean meats - they'll do that on their own once they understand the concept of paleo eating.  Eating enough fat doesn't come as easily to most people, so it's an obvious area to try to tweak.  If more fat doesn't agree with you or give you the results you want, then don't eat more.  If you haven't tried adding it in to see what happens, it might be a worthwhile experiment.

My most favorite yummy meal is a nice thick steak, 45 to 50% fat!  YUM!  And I even put a little ghee on top of it!  More Yum!!!!!    Every time we drive by the "slow elk" (black angus cattle) here in Montana I start salavating!  Of course I love the real elk too, but find it way too lean so have to add even more fat!    So you are doing it all wrong.  As they said above, dump the salad dressings, chocolate, etc,, and throw away the pancakes!  EAT FAT and you'll lose weight like crazy!
