Jerusalem Artichokes
« on: January 30, 2012, 05:52:27 AM »
I'm not sure what the decision is for Jerusalem Artichokes and the Paleo diet, but I wanted to mention that I just completed an interview with public domain plant breeder and cancer survivor written up in Dr Weil's first book Dr Alan Kapuler for my biodynamic food and farming podcast. Besides giving some good explanations on why GMO foods are bad for us in unexpected ways, he mentions that the inulin (sugar) in Jerusalem Artichokes feeds the gut flora that mother's milk also enhances. Most traditional diets have at least one inulin source Jerusalem Artichokes is one of those sources.

I neglected to say that if you want to hear that interview with Dr Kapuler, or recent ones with Joel Salatin and Sally Fallon Morell, you can do so at www.bdnow.org, The Biodynamics Now! Podcast Restorative Nutrition and Investigative Farming. Thanks!!
