need help figuring out how to do paleo...

I've been told by my allergy doc that I need to go paleo, but he, and most of the docs I've spoken with recently are hesitant to get too deep in to what exactly that means. I've been reading the Paleo Approach, and think I can do this going mostly fruits and veggies, but the problem is all my damn allergies are going to keep me from meat based protein and a lot of other stuff...

The allergy test from a few years ago (I was doing sublingual allergy drops for a while until I lost my last job and the insurance that covered it) said that I was allergic to a bunch of pollens, molds, and a variety foods including corn, soy, wheat, and chicken.  That allergy test said nothing about milk or eggs, etc.

The latest allergy tests (did a prick test and blood test since they apparently don't do the food prick test any more due to fear of setting people off in to anaphalaxis) says that I'm allergic to that same bunch of pollens and molds, but as far as food goes that I'm allergic to a variety of things including but not limited to barley, corn, peanuts, potato, tomato, and strawberry... and that I'm sensitive to eggs, dairy, wheat, beef, and oranges, and have a low sensitivity to soybean, pork, chocolate, cocoa, and lettuce.

How do you avoid beef, chicken, and pork? Is it safe to eat turkey? 

I've been doing that lately, but am not sure if it's safe if I have a poultry sensitivity?  Where can carbs and protein sources come from?  Carbs can probably be fruit and stuff like sweet potatoes, but the protein thing has me confused.  There is an interesting website list over at  http://www.theholykale.com/2011/11/plant-based-protein-chart/ that seems to have some advice... but it'd take a hell of a lot of stuff on that list to get up to the protein level I need for the day if that calculation on  the site for recommended protein level is right...

What do you PERSONALLY feel affects you negatively?  You could try an elimination diet for 30 days or so.

Usually in situations like this, excessive carbohydrate and detrimental lectins from wheat cause a generalized immune response - inflammation - that then makes you sensitive to all manner of other things.

My recommendation would be to strictly remove all grains and other starchy foods, including potatoes and sweet potatoes, but to go ahead and eat the things that are paleo but on your "sensitive" list, specifically beef, pork, and maybe eggs.  Fruit and nonstarchy veggies are fine too.

If you want to be extra safe, you could get your protein from fish until you feel better, then reintroduce other meats then.

Just be sure to avoid all grains, legumes including peanuts, tubers like potatoes and sweet potatoes, dairy, and all processed foods.  Edit:  also, drink only water - nothing sweet like soft drinks or fruit juices.  Whole fruit is fine.

Seems like various types of seafood may be the holy grail of protein in your diet. Can you do shellfish?

seafood may indeed be the key... Now if I can just talk the family in to doing seafood without it being something like battered fish, full of flour in the breading.

Stacey, hope you get over your illness soon.  To everyone who has a rough time in the first week- this is not uncommon.  Your body is having to make large adjustments because of the big changes in what you're eating. Don't make the mistake of trying to cut out fats, which is common because we've been told for decades to reduce animal fats, red meat, etc.. what you need to cut out entirely are grains, cereals, dairy, processed foods, etc., like you'll see repeated often here. I believe that to make the first week go more smoothly, you should concentrate on limiting the sugary fruits, and instead eat plenty of fresh vegetables, and plenty of protein and lots of healthful fats, i.e. the fats which are in red meats, fatty fish like salmon.  You may still have some discomfort during the transition, but eating plenty of protein and fats will smooth things over and keep you filled up.
