losing fat while gaining muscle

If I eat paleo and go to the gym 5 times a week, will I see results such as losing body fat and gaining muscle?

What you eat and how you train determines what kind of results you will see.
Going to the gym 5 X per week isn't necessary. Training REALLY HARD 3 X per week would probably be more beneficial.

It is quite possible to lose body fat and gain muscle at the same time.  I'm currently doing it (working out for 50 mins, once every three days).

I do it by staying very low carb.  I get plenty of protein for muscle food and fat for energy.
