Trip to Bahamas, Food ideas?

I've touched on this before, but it looks like we are finally going to take our sailboat to the Bahamas for a couple of months this year.
Our adjustment to the Paleo/Primal WOE has progress pretty well for the past 9-10 months, but we have had almost immediate access to meats and fresh veggies.  This will not be the case when we get in the islands.  When/if we stop in Nassau, we'll have access as if we were in the US, but once away and in the out islands our options are VERY limited.
The last time we went, we ate fresh fish we caught, but most evrything else was out of cans.  Breakfast was milk and cereal, sandwiches for lunch, appetisers for (happy hour) dinner etc.
Very little of what we ate was considered Paleo, except for the fish.
Please help me with ideas that will at least keep us somewhat close.

Our freezer on the boat is maybe 4" X 10", so keeping much in the way of vegetables is pretty limited.

Maybe canned vegetables? You can always spice them up.

If the water's shallow enough, maybe go snorkeling/diving for shellfish. Conches live in Bahamian waters, and taste delicious. Queen conch is an endangered species, so don't go after those. You also can't catch conches over 20 lbs.

Stock up on jerky and nuts too that will keep.

When in a seaside tropical locale, I tend to favor the following:

a) Fish and seafood. Most obvious protein choice, but usually lacking enough fat.
b) Cold-pressed (extra virgin) Coconut and/or palm oil.I'd take enough of whichever you like best. A big jar of coconut oil is a gazillion calories worth of paleo fat, and is probably shelf stable, ideally kept reasonably cool.

Other things I'd bring along:
c) Vitamin C sources, if you won't get enough fresh vitamin C containing fruit, such as pineapples. Think lemons or limes, lemon juice, pineapple juice or even supplements.
d) Other stuff that you use to cook the seafood. For me it may be canned tomatoes, tomato paste, onions, carrots, etc. For you it may be other things. I'd try to bring along enough variety.
e) Some nuts for snacks.
f) A decent variety of either frozen or canned vegetables for variety. Think frozen broccoli, canned spinach, etc.
g) Some land-animal fat, such as tallow or lard, to alternate with the coconut and/or palm oil.
h) Eggs.
i) Some cured meats for variety's sake and to fall back on if fishing fails. I'd bring a pata negra, but you pick the one you like.

OK,  It's only a few weeks before we head over to the Bahamas for a couple of months. 
We are begining to try to figure out what to take with us in the way of food.  We will be eating as much fish as we can and we'll take as much meat over as possible as well.  And as much frozen veggies as we have room for (not much).
It looks like we'll take nust and some jerky for snacks.  We'll take some white rice just to have.
We should be able to get eggs over there, (not Omega 3) and we'll come up with some type of breakfast meat as well.

This is going to be tough, but I guess we'll do the best we can and tthen get back on track when we get back.

Still looking for more ideas to make this trip as Paleo as possible.

Next we'll talk about all the happy hours and sundowners......
