What do you consider a perfect salad/vegies??

Guys,

I am new on here and I am wondering what you guys put on a salad?? I noticed that Tomatoes fall under "nightshades" and they are not good or paleo.

I tend to rotate between the following:

Day 1: Huge salad. lettuce, cucumbers, onions, (included tomatoes before I read the nightshade thing), some bell peppers, some celery, crushed almonds or walnuts. I would have all this with 1 oz red wine vinegar  (if need be substitute lemon juice) + 1/2 Olive oil.

Day 2: steamed vegies (Broccoli, cauliflower, carrots)  same vinegar and oil as above.

What would you do different or add vs avoid??

If you want to follow the nighshade restriction (Which I don't)  peppers are nightshades from what I hear....  I eat nightshades because they are healthy for the most part.  Some say they can cause arthritis but I am not so sure.  The benefits, ease of use and taste of tomatoes, eggplant and peppers is hard to give up for me.

I avoid nightshades because they give me arthritic symptoms.  My wife doesn't have any problems with them.

Mostly my salads are greens, generally baby spinach, plus perhaps carrots, cucumbers, and berries of various sorts.  My wife has those plus peppers and tomatoes and she also likes radishes.

I love mushrooms, eggs, and avocado on salads along with the veggies other people mentioned.  Lemon juice, olive oil, and some oregano for dressing.  Yum.

It all depends on time and convenience for dressing. Old standby is Lemon juice, olive oil, sea salt, pepper, garlic, mustard powder, and a bit of hot pepper flakes and/or cayenne. If I have coconut milk I will add a splash. I like mixed greens, tatsoi if available. Green onion and tomatoes for sure. Cucumbers, shredded carrot, avocado if available. If I am making use of leftovers I will add steak.  If it is a salad bar I will throw on plenty more paleo-friendly things like beets, egg, celery, onion, etc.

Big bowl of smooth-leaf spinach. Sauteed mushrooms and garlic. Cubed steak on top. No dressing. Bowl of mixed berries and nuts on the side. That is my perfect salad/meal. Salads can have meat, right?

The whole issue of "what to avoid" is complicated. As said, peppers are a nightshade and not Paleo, but you may be fine with them. I recommend to just eat tasty vegetables you like and don't worry much about the ones you don't.

Go easy on nuts as well. They are reasonably high in some of the same elements found in grains (phytates). Nuts are usually expensive, too. I would save that money for good-quality meat. Meat has the same protein, better fats, and no phytates.

I usually make my salads with spinach and kale as the base, with grated parsnip, carrot, beetroot and radish, lots of chopped mushrooms and onions, sometims some cauliflower and grated courgette, chopped white cabbage and leeks.  (all raw).  I don't use any dressings as I prefer plain food and I find the onions and leeks give it plenty of taste anyway.  I never bother with lettuce, it doesn't have anywhere near as much nutritional value as spinach and kale.

I eat baby spinach in salads daily....its one of my staples. About the only thing I add on a regular basis is fresh mushrooms and radishes. Other than that I add whatever I might have......cukes,baby carrots,occasional peppers....(I limit nightshades but don't entirely avoid them),avocados,cauliflower and Spanish onions. Basically whatever I can forage from the crisper.

I also started adding broccoli slaw(shredded broccoli, cabbage and carrot). Not only is a bag of it cheap, it stores well in the fridge and is perfect for salads and stirfrys.

Any thing I have on hand. I often put rocket in salads, and baby spinach. Grated red cabbage is good and so is grated zucchini.

Try also cold firm steamed veg - broccoli, pumpkin and capsicum with mustard is awesome (all cooked, still crisp and cold)

Lime, avocado and coconut oil is another awesome dressing.

Fruit and/or nuts in salad like apple and walnut
