Dinner for February 8th, 2012: pan fried sea scallops and broccoli/carrot medley. I steamed the veggies and dusted the sea scallops with a little chili powder.

Thanks! Scallops are good! I only eat them rarely, so they are a real treat when I do.

Dinner for Thursday, February 9th, 2012: Black and Bleu salad. I used green leaf lettuce, sliced white mushrooms, cucumbers, walnuts, a seared thin-sliced flank steak, a little bit of bleu cheese (not paleo, but I was sparing) and oil and vinegar.

No problem it's pretty easy:
1/4 head of green lettuce shredded
4 sliced white mushrooms
2 tablespoons of walnuts
half a cucumber deseeded and peeled (I like to leave some of the rind on, it's a texture thing)
1/2 lb. flank steak seasoned with ground pepper and chili powder.
crumbled blue cheese
olive oil and vinegar to taste

I braise the flanks steak on low heat for about forty minutes to tenderize it. Slow cooking helps to break down the steak, especially helpful when you're dealing with a tough cut of meat. You don't want to burn it though, so constantly check it. Remove from heat and cut into thin strips. Add the steak to the salad immediately before serving, as heat will wilt the green lettuce if it is left to sit. Add oil and vinegar and enjoy.

Dinner for Ash Wednesday, February 22, 2012: swordfish steaks, mashed root veggies (potatoes and rutabagas) and asparagus. I'm a little late in posting this... work has been busy, but better late than never.

You can see them if you go all the way back to my first page too. You can clearly tell that I haven't been touching the pasta and rice.
