My Food Journal for Monday (1/14)

I'm seriously struggling with energy and hunger, but I'm trying to get the hang of this.  Here is what I've eaten today.  It isn't totally Paleo, but I'm working towards it.

Breakfast
Scrambled Eggs
Bacon
Diet Pepsi

Lunch
Lemon Chicken
Green Beans (not Paleo, but all I had time to grab before going out the door)
Diet Pepsi

Dinner
Chicken
Asparagus
Water


That's it so far - no wonder I'm starving and tired.  I am definitely not eating enough.  But, I did eat a green vegetable for dinner.   I see a big need for improvement, so if anyone has suggestions, please feel free to jump in.  I want to be successful.  I am so tired and have no energy - I guess I should snack on some nuts and fruit during the day for some more energy.  I'll try to do better tomorrow.  I'm having a hard time ignoring the Peppermint Patties in the fridge though.  HELP!!

I could be wrong, but drinking Diet Soda could certainly contribute to your persisting hunger. I've read case studies about it actually increasing hunger in some instances.

Also, if you plan ahead of time a bit more (I know sometimes it isn't possible!!) you can have more variety and amount of veggies/fruits and that would help you, too. If you look at the meal plans in the Paleo Diet book (if available to you) the examples are astonishingly huge. Of course for me I am trying to lose weight, so I wouldn't eat 12 oz of Salmon and 1/2 of a cantaloupe with berries for breakfast. Plus, I don't think I can cram that much in my mouth in the morning!

Get rid of the patties!  ;)

Here is what I brought to work today:
Salad w/ fixin's and Paleo Dressing
Pear
Mixed Nuts
Fruit Salad with Pineapple, Starfruit, mandarin oranges
Cucumber
Beef Jerky
Porkchop

I am definitely not hungry after consuming this... and I probably won't eat it all. The key on this diet is to not deprive yourself. This isn't a "diet" but a lifestyle. Enjoy Nature's Bounty!!!  ;D

Thanks for the advice.  You are absolutely right.  I need to work on my meal planning skills.  I'm trying to get in the habit of  cooking a big Paleo meal for dinner so I can take the leftovers for lunch the next day.  It just hasn't worked out yet.  I am not giving up though!  I am determined to do this and break the nasty food addictions.  I have to!!!!

Your meal sounds delicious!  How do you make your beef jerky?  I've seen recipes in "The Paleo Diet" but have not attempted any yet.  I'm still a beginner in the kitchen.   ;D

Absolutely. One of the main complaints in my household is the length of time it takes to plan, prepare, and cook the meals. BUT, one alleviating aspect of it all is cooking large quantities for leftovers. Sometimes for lunches, sometimes for those lazy nights when you'd rather eat something out than make it yourself... instead eat some of dinner from 2 nights ago! Paleo AND fast. Phew. That was close. :)

Yes, don't give up! This diet is a huge change for a lot of us and even though we want it for ourselves, it is still hard to ignore the things we love most. My favorite foods before the diet were peanut butter and macaroni and cheese. My comfort foods. That's horrible, huh?? :) I can resist the mac n' cheese, but the peanut butter I have the occasional spoonful...

Stay strong and don't get too discouraged when you do slip up. We are all human and cheating a bit on the paleo diet can sometimes keep us more on track!

I get a lean cut of beef... rump roast perhaps. I asked the butcher to cut it in 1/8 inch slabs and I take it home and cut it in 1 inch or so strips. If you make it thicker it can increase the time it takes to dry significantly. I always trim off any fat that I can because lean beef still has plenty on the edges. I, if I can, will put the spices together and dip the beef strips in them and place them in a freezer bag and refrigerate them overnight. However sometimes, like tonight, I will just marinate them for about an hour before putting it in the dehydrator.

It is pricey, but a great dehydrator is the Excalibur, 9 tray. It has a horizontal drying system instead of vertical and that helps with even drying and prevents mixing of flavors if you are drying meat, veggies, and fruit all at once! The 9 tray has 15 square feet of drying space so you can put around 5lbs of jerky at once... or a mix of items. The Excalibur is also great because in order to view the progress of your items you simply slide out the tray. With the round models you have to lift each tray up to check on them.

You can alternatively dry them in the oven, but I think it has more true jerki-ness in the dehydrator.  :P
