Hello!

I'm so happy to find this forum! I'll be happy to post my meals each day to share with you all and you can also make sure I'm eating the right things as I want to do this plan right the first time :)

So my name is Spryng, it's my middle name and it's real. I'm a 32 year old mother of 4 and been married 14 years now.
For the last couple of years I've been battling not only my weight but stomach issues. I thought I had celiac disease for awhile there and even spent 4000+ bucks on tests which all came out inconclusive. So on my own I had cut out gluten, lost 35 lbs and wasn't throwing up as much as I did before but I'd still have stomach issues. So now it's time to take this one step further. I have a feeling I have a gluten sensitivity but I also think other things effect me, like dairy, maybe even non gluten grains etc so while I was researching I found Paleo! It's basically the diet I've been looking for to take those other things out of my life and see if my stomach can finally start to heal. So here I am! Yesterday was my first day on the plan. As far as food it was wonderful but I have been fighting a headache since yesterday afternoon...is it the caffeine withdrawel even though I only had one glass of crystal lite energy per day? or maybe it's the lack of processed carbs? not sure but I hope it passes soon. Did any of you deal with this your first few days? Did you take something for it?

ok, so I'll post yesterday's menu but let me warn you up front that I'm in no way an accomplished cook. My idea of a meal is something in the microwave and even then I can burn it, lol so cooking the "real" way is another challenge I'm taking on but I'm excited about it. Also I'm not too adventurous in the kitchen so if you start seeing me eat the same things over and over again is because I like to do that. Once I find flavors I enjoy I'll eat it like crazy for awhile and I utilize leftovers as well. But I do plan on trying new things and cooking more so who knows what might pop up in here.

So yesterday, Day 1:
Breakfast: two eggs over medium over mustard greens
Lunch: mahi-mahi pan seared with sauteed spinach with onion, mushrooms and garlic (this was my first time to try mahi mahi or pan sear a fish so it was a challenge!) and this was delicious for sure! I'll be making this meal more.
Dinner: oven roasted whole chicken- I used some garlic and evoo on it
            oven roasted zuchinni and mushrooms and onion with a little evoo and garlic
            half an apple, sliced

I have to admit all my meals were really good so if I was thinking this diet was gonna be bland then it would be my fault. Its as bland as you wanna cook it but it can also feel decadent. My mahi-mahi meal looked like it came right out of a nice restaurant and tasted just as good! I didn't know simple could be so delicious!

So anyway, I'll see how today goes and post tonight my menu and how I feel. Stay tuned!

Both carb withdrawl and caffeine withdrawl can give you a headache. I am weaning off the caffeine because I have gone off caffeine before and it always gives me the kind of headache that makes me feel like I am going to throw up. I was drinking a double or triple shot Starbucks mocha before last week and had weaned down to 1 shot before stating this WOE and now I am down to black tea as my caffeine source.

Good Luck! The roasted chicken sounded good. I think next time I roast a chicken, I'll stick an apple inside it and see how it flavors it...

Today's Menu:

Breakfast: two egg omlet with spinach and mushrooms

Lunch- leftover roasted chicken in lettuce wrap with avocado and 1/2 apple

Dinner: Pan seared salmon, side of asparagus and leftover roasted veggies from last night.

So today the headache subsided so that is good but the cravings set in! All I've thought about ALL day is pizza or even things like poptarts!! Do these cravings go away quickly as well because I have to admit they were soooo hard to deal with. If I would have had either of those things in the house I would have caved for sure. I don't like feeling deprived and I keep telling myself, you don't want them, they'll just make you sick anyway if you eat them so why want them so much?? Sigh.. a constant battle. I so want to just crave healthy food.. fruit, veggies, protein, but my stomach is shouting at me for other things still. I just hope it's a short lived phase and I start to feel more in control. We'll see how I feel tomorrow. :(

It gets easier.  The cravings will definitely go away after a period of time, AS LONG AS YOU DON'T GIVE IN TO THEM!!

I have always struggled with headaches, and while they are better on this diet I still get them.  I have a minor headache right now.  As soon as I feel a headache coming on I drink a large glass of water, if this doesn't help I make a cup of hot herbal green tea.  I believe I must be caffeine dependent because this always seems to help.

Good luck, your meals sound amazing!  I'm gonna have to try adding spinach to my eggs tomorrow morning.

Thanks for the encouragement! that is just what I did, just push through it and by the next morning they were gone and I've been feeling really great every since.

So here is my day 3 meals:

breakfast: leftover chicken with 1/2 avocado and 1/2 sliced peach
Lunch: mahi mahi pan seared with garlic with roasted asparagus and 1/2 apple
Dinner: Baked chicken with "rice" cauliflower. I grated them on my cheese grater and diced onion and then kinda made it like fried rice in my skillet with some evoo and at the end of cooking I added a little chicken stock because it looked a bit dry but it was good in the end!

So today is day 4, as far as symptoms I'm feeling really good! I slept wonderful last night, I am not needing nor wanting caffeine at all. All in all, things are going well! :o)
