Daily Food of a Paleo Redhead

I have been slowing moving toward eating more fruits, veggies, and lean meats and cutting out dairy and grains and suddenly found the perfect diet for me!! The Paleo. I had no idea it existed, but now I have finally found my way of life...

Food So Far:

Breakfast
Turkey (4 slices)
Grapes
Butternut Squash w/spice

Snack
Nectarine
Blood Orange

Dangit, I got so busy at work. Ok, I will do my best to post my journal.. I need to for myself!!

Breakfast
Lemon Turkey Cutlet
Poached Egg
Blackberries
Grapes

Lunch
3 - Omega 3 Turkey Meatballs
2 - Omega 3 Beef Meatballs
Salad - Spinach, Broccoli, Carrot, Anaheim Pepper w/Russian Dressing (Paleo Recipe)
Mixed Nuts - Macadamia, Walnut, Almond
Banana
Figs

Snack
Pear
Jerky

Dinner
First "Open Meal" Dinner!
2 Rat Toes (stuffed jalapeno w/crab, fried)
Razzoo's Stuffed Shrimp (ate very little rice, I forewent the blackeyed peas, but I do regret eating the whole garlic toast...)

Even though we decided we would enjoy a naughty open meal I still felt a little guilty. Not to mention I felt sluggish very soon after! I like knowing my body isn't used to fried, greasy food.. so that's nice! I once saw a family of 4 all very over weight with the Cajun Platter or somesuch.. a HUGE plate full of nothing but fried items. Yuck. Makes me sad for the children...oh the children!! Ok, sorry.

Spinach salad +veggies w/homemade Russian Dressing

Dinner
Celery w/ Salsa (I resisted tortilla chips!)
Buffalo Burgers
Fruit Salad (Bananas, Blackberries, Pears, Apples, Grapes, Starfruit)
Spinach Salad (similar to above)

Extra: 1 glass Wine, 1 slice cheddar cheese, handful organic "lite" cheese poofs (ah!)

Sunday
Breakfast - family brought food over...
Sundried Tomato Bagel w/tomato smear
1/2 Grandy's Cinnamon Roll

Lunch
Leftover Salmon from Saturday's lunch
Spinach Salad w/Russian Dressing
Grapes

Dinner
Leftovers: Buffalo Burger + 1 Beef Meatball
Spinach Salad
Cherries & Grapes

Snack
Dark Chocolate
Banana
Apple
Almond Butter
Very small glass wine w/friends

I could have been better this weekend for sure... but sometimes it is hard when friends and family are over. I will be stronger next time!

Snack
Mixed Nuts (Macadamia, Walnut, Almond)
Beef Jerky

Dinner - Thai Restaurant
Ground Chicken (w/Mushrooms and Peppers) Lettuce Wraps
Red Curry Chicken w/out Rice (w/Bamboo Shoots, Peppers, Thai Basil)

Thai was a perfect Paleo option for eating out. I LOVED the lettuce wraps. I almost always get red curry, so that's standard.

Banana Pear Ambrosia - Mango, Pear, Banana, Avocado, Pineapple Juice, Crushed Ice mixed and blended together. YUM!!
1 poached egg

Mid-Morning Snack
Red Tea w/dehydrated Strawberry & Passionfruit pieces + fresh squeezed OJ
Rest of Orange

Lunch
1 poached egg (out of leftover meat!)
Mandarin
Suddenly decided to grab some food with friends after I started to eat my own lunch.
We went to Boston's Gourmet Pizza... I had:

Baked Salmon w/out herb butter sauce
Roasted Veggies
2/3 of Breadstick (ah! I guess that's good considering I resisted pizza altogether.)

Snack - In preparation for Strength Training
Dried Apricots(3), Medjool Date(1), Fig(1)
Beef Jerky

Dinner
Pork Tenderloin (w/rub - coriander, cumin, paprika, canola oil, olive oil, red wine, fresh garlic)
Marinated Cauliflower Salad (w/onions & green pepper) Marinade - cumin, parsley, oregano, flax oil, olive oil
Grapes
Cantaloupe
Small Glass Red Wine

I think it should also be said that I always, always drink TONS of water.

1/2 Cantaloupe w/Raspberries, Blueberries, & Pecans in the cavity
1.5 scrambled eggs
1 TBSP Salsa

Mid-Morning "Snack"
Red Tea w/Fresh Squeezed OJ
Rest of Orange
Few mixed nuts

Lunch
Salad - Spinach, Chicken, few Egg white slices, tiny bit of bacon,   peppers, tomatoes, little olive oil
Fruit Salad - Banana, Blood Orange, Grapes, Pineapple, Mandarin, Kiwi... MMM!
1 or 2oz leftover Pork Tenderloin
 
Dinner
  • Shrimp basted with olive oil, garlic, cayenne pepper, pineapple juice, paprika, and lemon juice on skewers with fresh pineapple pieces. Broiled until yummy.
  • Homemade Tomato soup w/poblano peppers, green peppers, onion, garlic, cayenne, and paprika

Kashi Medit. Pizza (even has Omega 3! haha..)
Peanut Butter Toast with apple butter (I know, I know.. my dad made the apple butter, I need to eat it at some point!)

Thank you so much!! I have to be creative and change things around to stay happy with the diet. Salads get old for sure! :)

And OH NO! I haven't posted in a few days. I have been so busy at work I am neglecting my journals!

Thanks for the concern!! :)

I got it looked at by an Opthamologist and he said he saw no permanent damage. I will go back in 4 weeks to make sure nothing have developed.

It was really scary... and it could have been really bad. Thank goodness it was a temporary loss.

Now when I tell the story people find it funny, and I suppose it would have looked funny from the outside. I can laugh at it now since it was admittedly clumsy and I'm fine... Ha!

I have a slightly more details on my workout journal.

I planned to eat honey dew dessert after dinner but I was just too full!! Sweet.
