I was the same way at first - using stuff up.  I still have some canola that I use time to time, but that'll be gone soon.  I also started on the egg white thing as well, but soon learned what we really need is extra fat not extra protein (so to speak) and I stopped buying egg whites.  I do, from time to time, eat just the yolk and save the white for later use.  I figure that balances out though. :P

Adding to that above, towards the end of the night, I've been sleeping well because I have been sooooooooo tired about 6 hours before bedtime. I could sleep standing if I could, that is how I felt the last 2 days. This I assume is normal when you first start this way of eating, correct? Oh and feeling a little moody here and there.

Tiredness is normal.  Sleepiness while the sun is still up is not.  You may not be getting enough calories.  Certainly it seems to me that you are a bit low on calories and fat.

Are the eggs omega 3/pastured/organic eggs or are they commercial eggs?  If the latter, you may have a low omega 3:6 ratio, and omega 3 eggs may help with the moodiness.

I work night shift so most of my day is at night or in the dark. I go to bed about 2am, sun sets here in UK about 5:15ish right now and will soon set about 4:30. I have been feeling tired around 9-10pm about 3-4 hours before I hit the sack.

Calorie wise, Some days I eat high some days I eat low. Lately the calories have been between 1600-1700. Some days are really low say 1200-1300. Yesterday though was like 2000-2100! I will try not raise my cals too high, maybe 100-200 cals a day for the next week, see how I feel.
GOAL: 20% BF by Thanksgiving!

Todays Eats:

M1: 3 eggs, 3/4 c whites, 1 cup broccoli, 1 cup blue berries, 1/2 banana(pre-workout)
M2: 5 oz Chicken breast over salad: 2 cups romaine, slices of peppers and 1 tbs olive oil.
M3: 1 packet tuna 1 oz nuts
M4: 2 eggs, 1/2 banana, 1 oz nuts
M5: 6 oz ribeye steak, 1 cup sliced zucchini, 1 tbs butter

I think I do need to eat more food because I am getting hungry more...dammit, I though I had this.
GOAL: 20% BF by Thanksgiving!

Has anyone else had weird mood swings in the beginning of their paleo eating? Some days I feel so damn good! Others I could cry for no reason or just...cry. I think my body chemistry is not right.

Paleo since 17 October 2010

I have been eating fruit but not much. I haven't even cheated yet...lol. Only the peanut butter was a bad thing 2 weeks ago.

mood swings or the like will pass. I'd bet it is either withdrawal from grains or what many (but not all) experience the first few weeks in ketosis. You'll be fine!  ;D

That explains the sleepiness.  Most of us find we are more sensitive to the diurnal light rhythm on paleo.  One problem some of us were having is that we end up staying up too late if we're in front of a computer screen at full brightness through the evening.

If you have control over the lighting at work, make sure it's sufficiently bright, and preferably with a spectrum as close to daylight as possible.

Oi. Mood is one of the reasons I went Paleo. At first, the change was good when I was eating salads, fruits, nuts, and lean meat.

When I switched to meat-heavy, fat-heavy Paleo I also started buying from a local butcher who said he gets his animals from a couple big slaughterhouses. The meat looked terrible and I felt terrible. That didn't last long.

Now I try to buy from reputable brands and I buy local eggs and broilers. Not pastured, but better than mystery meat I figure. Seemed to kick my mood back in order, too.

Placebo effect or legitimate? I can't say for sure. It could be worth looking into your meat sources.

after getting the responses to my posts---I'm wondering if you need more fat earlier in the day. I haven't had any mood swings (and I'm a woman as well) but the sleepiness and mood swings reminds me of how I felt in caloric deprivation. ?? good luck.

How is the fat loss coming along?

I work an off shift as well and find after the time change that it is very diffucult.  (I wish they would leave the Blankety-Blank clock alone!)  So, from now to the time they spring it ahead again. (Deep Sigh!) I take viatamin D and SamE, I find those with a general multi-vitamin help a great deal with the sleeping problems and the mood issues.
