keeping it simple for keeps!

Glad to be back-looking forward to less time cooking and eating and the boost of time and energy that comes with a simple, low ingredient, no muss no fuss way of eating :)
I plan to eat 1 to 2 times a day- mostly fruit during the day and very rare beef, veal,pork, bacon, chicken, eggs fish for dinner with occasional vegies and more fruit

I'm modifying my original post slightly...

Amazing week-end, feeling great  ;D
Saturday-Meal 1:2 large slices ham, 1 pear
              -Meal 2: huge salad, chicken vegetable soup, shrimp, chicken, ham
Sunday-Meal 1: rest of huge salad with shrimp,1 apple,tea
           -Meal 2: pork,veal,beef with shallots and celery in tomato soup(sloppy joe),salad
snacks-celery/guacamole
looking forward to a great week : )

Monday-Meal 1-4 slices of ham, 3 eggs scrambled, applesauce, pineapple
            -Meal 2-salad with mandarins and cranberries, chicken leg

lol Actually the salad at Mom's was so huge and giant slabs of Chicken and ham and huge bowl of thick soup loaded with more chicken and vegies-I couldn't even finish it all. The sloppy joe last night was a whole pound of pork beef and veal and another decent sized salad loaded with celery and shallots-I guess it sounds puny in writing. I do crave potato chips sometimes though  :-[

Oh ok that sounds good then :)

Dont worry- I crave them as well! Im thinking of thinly slicing some zucchini, eggplant, pumpkin and whatever other solid vegetable and shallow frying them in coconut oil and sprinking salt on them to fix my cravings! Or Kale Chips are great as well, theyre really yummy :)

zuchini is one of my favorites-never thought of that-I guess u could just bake them in the oven too? great ideas!

Tuesday-Meal 1:chicken leg, chicken wing, blueberry/pineapple mix, green pepper strips
             -Meal 2: cabbage soup, blueberry/pineapple mix
             -snack-chicken/ green peppers/carrots


oh i forgot on Monday I also had a tin of salmon with shallots and celery

Wednesday
light eating throughout the day
2 bananas, 2 apples dipped in guacamole, yum! peach/applesauce, celery/guacamole,few carrots
dinner-veal patties cooked with onion, salad, blueberries

didn't drink enough water today so feeling sluggish this evening-time to fix that What was I thinking ::)

most amazing snack ever! I was surprised too. Any kind of apple, I prefer sweet, cut into wedges and dip til your heart is content ;D

Thursday of sneezing misery  :(
banana, cranberry/blueberry juice, vitamin C/D water
Meal 1 left over veal patties/onion, salad
Meal 2 stew in crockpot for the family -beef, carrots, peas, tomatoes, onion, potatoes(i didn't eat them)
blueberries, raw brocolli, carrots

Friday
lots of water-blueberries, banana,pears, few carrots, celery. Vitamin c/d beat this cold in 2 days flat by eating little and drinking lots of water
