I keep track of what I eat at dailyburn, and since I have the free membership I can't keep track of my sodium or potassium. But that's ok, as I've been eating low sodium foods for a while, and take potassium citrate supplements to ensure that I don't fall short. I also take a calcium/magnesium/D3 supplement, from Citracal.
I'm 5'4", and weighed 135lbs back in February. After cutting back on sugary foods, cheese, starches like pasta and bread, I made it down to 125lbs. I'm super happy with that weight, am back on track with a normal BMI. I'm sedentary but have always been thin, so weighing 135 pounds really felt horrible. I got that way by having a poor diet, and sure enough, lost the weight by dieting. Hooray! I'm not looking to really lose any more weight--this is a maintenance diet.
I started Paleo this past weekend, and will continue looking for ways to cut the crap out of my diet. The only thing I drink is water (10-12 glasses a day), but occasionally I'll have a glass of red wine with dinner. I haven't drank soda or tea (iced or hot) for almost a year now.
Monday 9/6/10--1329 calories/54g fat/83g protein/138g carbs
B: double espresso with 1tbsp unfiltered honey
S: mango juice, gala apple slices dunked in almond butter
L: 2 hard-boiled cage-free eggs, 1 cup cucumber/onion/dill salad, 1/2 roasted chicken breast on the bone
S: 6 whole pitted dates
D: 1/2 stuffed bell pepper with lean ground beef mixed with a 1/2 egg & topped with organic salsa
Tuesday 9/7/10--1272 calories/57g fat/83g protein/124.5g carbs
B: double espresso w/ honey & 2 wedges of watermelon
S: gala apple slices & almond butter
L: 1/2 stuffed bell pepper with lean ground beef mixed with a 1/2 egg & topped with organic salsa (leftovers)
D: 1 cup butternut squash w/ cinnamon, 8 oz diced chicken breast cooked in curry coconut sauce
Wednesday 9/8/10--1309 calories/51g fat/73.4g protein/148.7 carbs
B: double espresso w/ honey
S: gala apple slices w/ almond butter
L: 1 cup butternut squash w/ cinnamon, 8 oz diced chicken breast cooked in curry coconut sauce (leftovers)
D: 5 eggs, scrambled, topped with organic salsa and 2 peaches for dessert
Thursday 9/9/10--1565 calories/61.2g fat/68g protein/192.6 carbs
weighed in at 122.8lbs
B: double espresso w/ honey
S: 1 cup of blueberries
L: Chow mein thai peanut flavor (no leftovers--felt like shit afterwards, took me a few hours to feel back to normal), 5.5oz low-sodium V8, 1/4 cup sliced almonds, 5 pitted dates
D: 8oz grilled pork loin, 1cup arugula & 1 cup watercress, mango juice for dessert
So far this week I've felt really good. No tiredness in the afternoons, my poops have been large and normal (a type 4, if I remember correctly) so I'm getting plenty of fiber. No blood in my stool from my hemorrhoids all week--yay! I've also lost another pound, unusual considering that I normally retain water in the days preceding my menstruation (due today or tomorrow). I'm also less bitchy than what usually comes with my PMS, and haven't had an acne breakout which also tends to precede my period.

for each day in grams, along with calories, protein & carbs.
Is there a fat-burning dietary fat intake range I should aim for each day?

How much fat, in quantity (not grams) are you eating
with
your food.
I see chicken breast and lean mince, no mention of what you are cooking with. On the other hand I see lots of sweet stuff like mango juice, dates watermelon. So I'm wondering if you are getting a lot of your energy there and if you are trying to go lower fat
You may need to change these ratios later.

Well, you are little so I'd aim to change around for way less carbs and lots more protein and fat (and saturated fat at that). If you want fat burning - eat less carbs and more fat.
To give you an idea, I'm 5'3" and I'd eat around 50g carbs, and somewhere around 100g of fat and 50-80g protein and that's on a big day. I eat lots of really big salads and servings of of mostly green veg, but root veg when I feel like it and some fruit. ATM I'm eating huge quantities of strawberries because I've been given tons, but also grapefruit from a friend's tree and mangoes from down the road. Most of my energy comes from the protein but above all, the fat I eat.
I don't drink juice - it's too easy to consume a huge quantity of fruit/veg without feeling full.
BTW - loves the on nom noms

Nope, not trying to lower my fat with my meats, not intentionally at least! When I cook something in the pan, I use coconut oil. And for the fruits and such, I haven't experienced any sort of spikes or crashes during the day (which I would if I'd eaten grain-based carbs like I did on Thursday for lunch--ugh). And the mango juice is actually mango puree mixed with some apple juice (so it isn't too thick to drink), so it's not the pure sugary goodness that most juices are.
For dinner tonight, I made cornish hens stuffed with minced apples tossed with cinnamon, and basted in an orange juice/coffee/spice mix. I took a half a peeled orange and pureed it whole, added a bit of water and strained it. So it's definitely not the juice from a carton! lol Alongside the hens, I roasted some small carrots & baby red onions, tossed in a balsamic vinaigrette & coconut oil sauce.
And I cook my poultry breast side down for half of the cooking, so the fats from the back work their way down into the breast meat. Juicy!

Not much to go by of course, but I'd go easy on the honey (an occassional treat) and be sure you're eating the chicken's skin. I'd be sure to also eat the dark meat as well as it is fattier.

Oh yes, if I cook a whole chicken (or hen, as they're easier to eat whole), I eat everything. I like getting the skin nice and crispy and just peeling it right off and straight into my mouth. Om nom noms!

Boyfriend is at a meeting tonight, so I don't have to listen to back to back episodes of "Stargate: Atlantis" from down the hallway *peaceful*

Your diet is the retort to the BS I get when people insist that paleo or low crb diets are boring. Baby red onions? Never heard of them. I'd eat them like grapes.

They're like the small pearled onions you'd put in roasts or stews. They're only about 1 1/2" long. They turned to butter in my mouth after 45 min in the oven!
I think there are tons of recipes out there that can easily be re-worked to Paleo.

I buy old cookbooks at thrift stores. Wonderful recipes, especially those published before the 50's. All natural and they didn't fear animal fats.

Chelles: my grandma has a great recipe for apple sauce pork chops with onion. TO. DIE. FOR. Just swap out the apple sauce with real apple puree.
I also meant to mention, as a general response to my food log: I'm trying not to go too high-protein in order to reduce the acid base load in my body. Hence the plethora of fruits in my diet thus far. I'd like to be as gentle on my kidneys as I can. The amount of protein I've eaten so far this week is more than I'd normally consume, but then so is the amount of fruit & veg.

Too much prot. impedes weight loss for me. I try for at least 75 grams a day, but not much higher.
