Making chicken Fun

I had a small grocery budget this week, and chose to spend most of that one fresh fruits and veggies, which left me with Chicken for dinner all week....It is killing me!  What are some fun ways to spice up chicken?  I am sick of just plain or marinated chicken breasts....I would love some yummy sauces or stuffings to add a little variety!!  Any suggestions would be greatly appretiated!!

I never seem to get tired of buffalo spicy chicken breasts. I kind of cook it by feel now, but this should be close:

--2 lbs. chicken breast, strips
--2 tbsp butter (I use Smart Balance, though there may be a more paleo substitute you can use.)
--4 tbsp hot pepper sauce (tabasco)
--1 tbsp paprika
--1/2 tsp cayenne pepper
--1/4 tsp black pepper

Melt butter with spices and tabasco, then pour all but 2 tbsp of sauce in a bag with the chicken and let marinade for half an hour. Bake the chicken strips (400 degrees about 20-25 minutes or until cooked). Coat with reserved sauce.

There are lots of buffalo chicken recipes on the Internet, some of which may allow olive oil instead of butter.

Thanks! I will try that one!   I love spicy food...I already made this week a kinda burrito filling with Tomatoe Sauce Poblano Peppers Onions Chicken and chili powder cumin and a bunch of other spices...and then i tossed in some bok choy too...trying to soak up some of the tomato sauce...it was good...but man did i miss the burrito shell and cheese!!
