I'm brand new here, but I thought it would be fun and helpful to record what I eat each day. Please feel free to give me tips if you want! I love reading other people's journals as well.
So today........
2 eggs fried sunny side up in coconut oil, with some marinated raw veggies I had leftover from yesterday's potluck. Marinade was olive oil and red wine vinegar.
1 small apple
lunch was a romaine lettuce salad with grilled chicken, guacamole, and salsa for dressing. That was surprisingly filling BTW! I ate at Cafe Rio and when my salad was made it looked pretty pitiful compared to the way my salad usually looks at this place. But it was very tasty. :D
Snack was kale chips. I made them this afternoon and you can't stop yourself from snacking on them straight from the dehydrator. They had olive oil and salt on them.
Dinner was 1 roasted chicken leg quarter and roasted brussels sprouts, one glass of chardonnay.

So what do you think? Do you think I exceeded the carbs with that apple? I also see that the brussels sprouts have quite a lot of carbs. Not too many?

Oh I forgot, I had 3 cups of coffee in the morning and a glass of iced tea in the afternoon. Straight.

Looks pretty good to me.  If I were to criticize anything, it would be the Chardonnay, not the apple.  Grocery store salsa often has sugar in it, but restaurants usually make it from fresh ingredients.

Sounds from your other posts like you are getting slow but steady weight loss, so I'd say just keep doing what you're doing.

You think the wine isn't okay? I thought it would be okay because 4 oz has less than 1 gram of carbs. I really enjoy that glass! LOL

Homemade salsa kicks butt compared to store stuff, ONLY because no vinegar.

Look up "easy salsa recipe" and you can use canned stuff for $3-ish total and it'll make a bunch of great tasting stuff. The most expensive ingredient by far will be fresh cilantro ;)

Alcohol isn't really paleo.  That said, if you really enjoy it, you could leave it in as long as you're making satisfactory progress.  4 oz is not a big cheat.

Eric, I love salsa too! I think that it's an amazing invention that jazzes up everything.  :D
I usually make fermented salsa, we love it around my house. Yum.
The salsa at Cafe Rio is made fresh daily, so I hope it's good.

Today's (Sunday) journal...
First meal of the day was at noon, after church. It was a mixed veggie salad with two hard-boiled eggs. Also two strawberries and a handful of grapes.
The other day I made kale chips and I've been snacking on them this afternoon.
Tonight I'm making zucchini lasagna for the first time. The sauce will be ground beef and veggies. I can't wait to make this one!
I will probably have a glass of wine. I'm feeling deprived because of all the cakes and bagels I saw everyone eat while I was eating my salad.  ::)

Here's something strange I'm experiencing and I'm hoping I can get some insight on it. I have developed a rash on my upper body, mainly my chest and neck. It's been here for a few days.  :-\ Could it be a detox rash? The bumps are fluid filled (gross, sorry).

This may or may not be related, but some people with eczema have reported that it got worse initially, before going away entirely.  My guess is that's due to initial improvement of the immune system, which with a change in skin chemistry eventually kills off the bacteria associated with eczema.

Your rash doesn't really sound like eczema, though.  If it's serious you could have a doctor look at it and at least tell you what it is.

If it doesn't go away in a few days I'll go to see a doctor. I've never suffered from eczema, but I was reading that sometimes a rash like this can develop during a period of fat release. Toxins stored in fat start coming out, sometimes through the skin.
Honestly, my diet was not the SAD before this. I ate pretty much a whole food diet, with occasional cheats when I was at a social gathering. But junk food never entered our house.

Salsa IS awesome.  Mexican in general is good for dairy-free and gluten-free friends/family.

Tonight's dinner was SO GOOD. I roasted veggies (eggplant, red peppers, cauliflower, cherry tomatoes, zucchini) and I made stacks with the eggplant and red peppers. On top I put a Trader Joe's chili lime chicken patty, on top of that I put some guac I made with avo and green chilies. It was great!!!
