One mans quest to do without the carbs he loves
« on: August 17, 2011, 05:10:40 AM »
Sooooooooo, as much as I love things like granola, pasta, rice and semi skimmed milk etc, I am having my eyes opened and am embracing the paleo lifestyle. I've been low on energy since I started Monday of last week (8th August) but I realise this will past. Already my skin is is much better condition than normal (adult acne on my forehead), I feel lighter and much less bloated even though I am already in decent shape. I will be adding to the progress pictures thread periodically.

Anyway, as you all know it can be difficult at first to know if you are eating the correct foods so i'm going to do my best to keep this up to date for you guys to comment on and help me along. I do tend to have a serious appetite and it'll be nice to know if i'm over eating at times.

Couple of things to note I guess, i'm 6ft tall, and currently 88.9kg. I exercise 6 days out of 7 in one form or another, weights, running and mountain biking being the bulk of it.

16th August:

Breakfast: 09:00 - 2 egg omlette with peppers and mushrooms, 1 pork chop.

Snack: 10:30 - 1 apple.

Lunch: 13:30 - 5 chicken thighs, 1/2 sirloin steak leftover from night before, loads of spinach, handful small bell peppers, half an avocado, mushrooms, courgettes.

Snack: 16:00 - Medium Banana

Gym:    17:00 - Free weights workout session followed by 4 mile run.

Dinner: 19:45 - King prawns to start, Sirloin steak with lots of peppers, carrots and asparagus.

Snack: 21:30 - Couple of squares of dark chocolate, can't remember the brand.

Fluids - Approx 4-5 litres of water throughout the day and evening.

Are you adding fats to your food? It looks like your diet is very heavy on protein. Protein will make you full, but in your body around 50% will be converted to glucose through gluconeogenesis: http://en.wikipedia.org/wiki/Gluconeogenesis. If you want to heal, your body needs lots of animal fats, like lard, suet, chicken fat. When I ate cooked, I would always save bones and render the fat out of leftovers, including whole chicken carcasses. You can filter it through a cheesecloth and let it settle, the fat will rise to the top. You can then add the fat to your food. The broth can be used for soups, or you can use the stock (broth & fat) for richer soups.

All my cooking is done in olive oil, I have been wodnering if i'm getting the fat I need to be honest, though i do eat all the fat that comes on the meat I have, as well as the skin from the chicken. Any further tips from getting extra fat?

I struggled with this at first too, and the helpful folks around here said to use lard and tallow to cook vegetables. Both Tallow and Lard are fairly easy to render and CelticCaveGirl has a good step by step for tallow in Recipes I think. You just need to find the suet (beef fat) which can be challenging depending on where you live.

I use either to fry most things, or to use in place of butter when cooking. Carrots fried in lard are really VERY good. :-D But it's a way to get more fat in and still eat your veggies.

Kyleen has the idea: lard and tallow are good, and you can also use marrow from marrow bones.
