PaleoRedHead's Journal
« on: May 13, 2011, 08:55:24 AM »
I decided to start a new journal instead of adding to my old. Sometimes we need a fresh start!!

Friday
Breakfast
Watermelon

Snack
Beef jerky (1oz)
Almond Milk (unsweetened)

Lunch
"Blackened" Tilapia
Onions & Zucchini
Chickpea salad

Dinner
The dinner party ended up being a Saladmaster sales pitch... and actually, it was quite enjoyable. The sale was not extremely hard and they made dinner for 6 people with so little food, no oils, and used this amazing food cutter. I am definitely hosting my own just to get that food cutter alone!!! Half my time in the kitchen is cutting veggies and fruits for Paleo dishes. The food tasted amazing, though.

All the food had no spices or butter, etc:
Chicken Thigh (1)
Cooked peas, carrots, cabbage, and carrots
Cole slaw - cabbage, apples, celery, radish w/ lemon juice and zest
TINY bit of mashed potatoes

They made this cake (in a pot on the range top!) with 1/2 a pineapple upside down box, shredded cabbage, carrot, potato, and 2 eggs. There was 16 calories in each slice. I have to say, I ate one!!!

I know the saladmasters cookware is uber expensive but it does have a lifetime warranty and everywhere I've read, people have had theirs for 20, 30, 40 years. They've been around 65 years or so. 2 of their main selling points for me were quick cooking time (using a vacuum seal, almost opposite of a pressure cooker and keeping the nutrients in supposedly) AND it does not have any harmful non-stick coatings. It is truly water-less cooking.

Saturday
Breakfast
I woke up late for a Realtor orientation meeting in the city and..excuses, excuses! :) I ate 1 burger king egg muffin. When I arrived, they had fruit... I kicked myself. They never mentioned having any food there!! I'm the type that if I don't eat, I can't concentrate and I was desperate. It's a lesson in why I need to be prepared (always!) with with quick things to eat for breakfast.

I ate watermelon and pineapple at the orientation.

Lunch
Tilapia "tacos" with green leaf lettuce "tortilla - sauteed onions, peppers, raw shredded carrot, salsa
Watermelon

I made my own taco seasoning for these and OMG, amazing:
1 tsp chili powder
1 teaspoon paprika
1/4 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1 teaspoons ground cumin
1 teaspoon black pepper

I just sprinkled it on the veggies when frying and rubbed the tilapia well with the mixture.

Exercise
Cindy (Crossfit workout, buttercup version modified for my abilities)
10 min time limit, score for rounds.
3 assisted pull-ups (2 Green bands (#6)), 2 knee pushups, 7 "chair" squats (I use a chair as I am still getting over the mental block where I apparently am afraid of falling backward, it's working wonderfully right now!!)

I did 14 rounds, 1 more than I did a month a go. Yesss. I plan to reduce the size of the bands I'm using for the pullups next time.

My husband and I then did a quick run around the block 0.41 miles, 4:24
Final cashout: grip work! I used the Sport gripper, 5x1 rep on each hand.

Sunday
Breakfast
4 HB Quail Eggs

Heading to a Moroccan brunch for a friend's birthday. It's a Prix Fixe menu, so I'll do my best! :)

[Edit: 5/16/2011, 10:19am]
I listed out everything I ate, attempted to attach a photo and it failed, making me lose my post. *cries*
It was an open meal for the most part.

I was so full that I made a green smoothie for dinner and that's it. (Link to my blog, I've been hovering around it for a while. Just tooled around with it last night.)

I had an allergy attack possibly from sitting outside at brunch, so we didn't work out. My husband and I are going to randomly draw from some Crossfit cards we created. We sifted through all the workouts and wrote those that we could do (both physically and materially) on notecards. I look forward to it since half the battle is deciding what to do! Allow the cards to decide!!

Watermelon

Lunch
Chicken Tikka Masala w/cauliflower rice

We drew the Angie Crossfit workout card! We are pretty much at the "buttercup" version of all xfit workouts, so here's what I did:

Thursday
Breakfast
Quiche - chicken and veggies
Coffee w/a bit of almond milk (unsweet) and stevia

Workout
Nicole xfit workout: buttercup version is 3 rounds of 200m run and 12 pullups for time. (I used 2 Green bands/#6)

I did it in 6:08 on 4/11 and I did it in 6:11 on 5/19... unfortunately I met "pukie" the clown. (An unofficial mascot of crossfit, which helps you understand that it's all about pushing yourself..HARD!) I guess I drank water too soon before it and indeed pushed myself. If I hadn't lost it during the workout, I definitely would have beat my time. Next time!!!

Lunch
Smoothie - cranberry water, banana, kale, frozen strawberry, egg white protein powder
Turkey Stir Fry - ground turkey, frozen veggies, onion, leftover paleo tikka masala sauce

Dinner
Hamburger salad - 1/2 hamburger, greens, carrot, sauteed onions and peppers

Friday
Breakfast
Sometimes my desire for cheap sometimes gets in the way of my opinion of bad food!
I had 2 meat kolaches where I ripped most of the bread off, and 3 donut holes
6 strawberries

Lunch
Turkey Stir Fry from last night

Dinner - We went on a double date to a bbq place, then to see Thor

Admittedly I wasn't 100% paleo over the weekend as I went to a "slumber party" at some friends' house. They had pizza for dinner that night and cookies for dessert. I was proud of myself for not eating a lot of either.

The next morning there were meats, cheeses, bread, fruit. I ate very little of the non-paleo and loaded up on meats sand fruits. I even avoided another cookie snack time later in the day! :) I did drink some liquor/beer though...

I started Monday ready to clean my system by eating well. It does not take long AT ALL for my body to clear it out.

Monday
Breakfast
Blackberries
Quinoa pudding - banana, unsweet almond milk, stevia, vanilla, cinnamon. (I realize that Quinoa isn't paleo in the strictest sense, but it is the closest grain-like substance to oatmeal, etc. I have never tried it before and thought I'd give it a try for a treat.)

Lunch
Slow Cooked Chicken Thighs - Red cabbage, apples, carrots, onions
Watermelon, Cantaloupe, Pineapple

Dinner
Bok Choy Cups w/Salsa  (amazing scooping devices!)
Scrambled Eggs (2:1::Duck:Chicken)
Sauteed Veggies - Red Onion,  Shredded Cabbage, Shredded Carrot, Bok Choy greens, Green pepper, garlic
Bacon (baked in the oven) - I did fry some up because they didn't fit on my pan. I then sauteed the veggies in the yumminess.

Tuesday
Breakfast
Quinoa "pudding"
Bacon

The last few days I've felt weird... dizzy sort of feeling. The common difference is the quinoa. I wonder if I just do not react well to it. I don't plan to eat it often anyway (it's more of a cheat), but it's interesting.

Lunch
Chicken Stew (same as yesterday)
Pear
I was bad and had a small pecan praline cupcake, I did remove most of the frosting! It was my boss's birthday. Luckily it was a small morsel. I REALLY felt the sugar rush after and drank tons of water.

Dinner
Bacon Slider Wraps - lettuce wraps, shredded carrot, sliced onion, tomato
Smoothie - cranberry water, fresh banana, strawberry, blackberry, parsley, frozen peach, egg white protein, flaxseed meal

I just came back from a holiday weekend -- I feel I did pretty well for myself considering that I was surrounded by non-paleo foods! I kept away from rolls and dairy for a good part of the weekend. Yesterday I spent several hours in the kitchen, cooking up a frenzy. I really enjoyed creating dishes out of food we had in the freezer, fridge, or pantry!

I made:
"Deviled" Eggs - yolks, ground turkey, relish, tad of mayo, mustard, spices. I piped it back in, my first experience making deviled eggs. My husband loves the varying textures and tastes. Success!
Turkey Scramble - ground turkey and eggs, spices
Squash Bean Soup - I had a mix of dried beans I needed to use and an acorn squash. I used the liquid/stock after cooking a roast. I also sprinkled in some ground turkey and coconut milk for creaminess.
Chicken Slaw - diced chicken, shredded carrot, cabbage, etc with oils and a bit of apple cider vinegar. I didn't have any lemon juice, or I would have added that instead!

Tuesday
Breakfast
Deviled Eggs (2 halves)
2 Clementines
Coffee

Lunch
Chicken Slaw over a bed of greens
Pear

Afternoon walk - 1.3 miles in 19 minutes

Nicole xfit workout -- details in next post.

Dinner - not quite sure yet, but we are going out with a friend. ***Edit: Sushi!
Tuna, Salmon, Snapper, and Shrimp sushi
My husband ordered a pork wrap dish, so I had some of that

Last time I did Nicole (xfit workout) I met pukie... I was in bad shape. I wasn't able to beat my 6:08 time, which is always disappointing!

If I hadn't lost it during the workout, I definitely would have beat my time. Next time!!!

Today I did NOT disappoint myself! I did it in 4:48!! I did it with 2 green bands again, and next time I will graduate to one green, one blue and see where that takes me. Once I improve in my sprint abilities I will start doing 5 rounds instead of 3. It's really satisfying to see obvious improvement. Texas summer gets pretty sweltering, so we'll see how I progress over the next few months! Ha.
