Selina's dodgy but honest Food Journal...
« on: June 03, 2011, 05:03:20 AM »
Hi all,
2 weeks in as a Paleo (semi) convert and trying trying...
My meals in general as follows...
Breakfasts... 3 eggs scrambled with a little Zymil milk, black coffee no sugar, or omelette with tomato, avocado, mushroom, shallots, goats cheese and touch of Zymil milk and most have been cooked in butter.

Lunches, either tinned tuna with a mixed salad or chicken with a mixed salad. Dressing of olive oil and lime juice. Had fruit salad with cream one day.

Snacks of boiled eggs in between and 2 mandarins.

Black coffee in the afternoon.

Dinners have been, Moroccan chicken with cauliflower rice, Chicken Cacciatore with cauliflower rice (this had store chicken stock in it) prawns fried in ghee with garlic and lime and stir fried vegetables in ghee also, chicken with steamed veges with butter, chicken cooked in butter, garlic and chili with steamed veges, prawns shelled with salad and watermelon. Vegetable stack that had been fried in a balsamic vinegar reduction..this was out at a restaurant and came with turkish bread which I gave to someone else. :) And I made salmon cakes with coconut flour and had them with steamed veges two nights.

Couple of fresh nuts as snacks and the other day I craved something sweet so had a spoonful of cashew and almond and something nut paste. It has nothing else added to it. Ive also had a handful on nuts, no peanuts, on occasion.

I've broken it with the butter and Zymil milk I know, and I had a rhubarb and apple crumble with cream while eating out but could only tolerate a few mouthfuls as it was too sweet tasting. Also 2 glasses of red wine and one low calorie beer. I think thats it and Im currently perusing recipes to try and vary what Im having.
Funny thing is Ive never had a sweet tooth but Im craving something sweet... Im reading all these yummy desserts online but most have honey or  another sweetener in them.
All comments welcome..dont think I can give up the coffee though :)

Hi Selina:

I think a lot of folks who stick best to the paleo principals are the ones that start of slow and ease their way into it. At least that's what I've been observing.

Good job! Keep at it. You'll get to where you want to be eventually.  ;)

Thanks :) the weight is already starting to come off even though I can't exercise at the moment.
Yesterdays efforts
Breakfast 3 eggs with mushrooms, tomato, and bacon chopped in it. Black coffee.
Lunch: got caught out at soccer with no food but a mandarin so ordered a fried egg sandwich and tossed the bread. Had some chicken breast when I got home.
Dinner: coconut chicken curry made from a recipe I found online. All paleo I think except maybe the red curry paste.

Scrambled eggs with tomato, bacon, shallots, mushrooms and goats cheese. Coffee with Zymil milk and choc powder sprinkled on top ( not my fault but hubby)
Lunch was leftover coconut chicken curry and a mandarin.
Dinner, beef stew made with tinned tomatoes, bay leaves, onions, carrots cheated with the beef stock but fried in beef lard, and red wine. Eaten with cauliflower rice.
Made dessert as still dealing with the sweet tooth. Had raspberries and blueberries with lemon custard(eggs, coconut milk, lemon juice, honey)
Still feel like I failed because of those little things and I feel a bit bloated :(
I've had an attempt at making chicken stock. We'll see how that turns out in the morning after it's cooled...

I think you are going well.

Just so you know I make a custard too but I use coconut milk, egg and vanilla over sliced pear then bake or microwave. The pear is enough sweetening for me. I like your idea of lemon juice instead of pear.

Is the Zymil almond milk?

looks good for a starter

however!
red meat!  where is the red meat!  All chicken!!!!!!!!!!!!!!!
Try to add some yummy, fatty red meat.  Stewing lamb, 80% ground beef etc.

Eggs - try scrambling with butter and water rather than milk

izzi :)

Avelin, Zymil is lactose free milk. I got the lemon custard recipe out of a recipe book. Has some great ideas.

Izzi I've only just started eating red meat so it's a work in progress :/ I never have liked it so it's amazing for me to have it lol

Anyway today's meals,

Scrambled eggs x 3 with smidge of Zymil .
Mandarin, boiled egg
Leftover chicken and veggies
Fried egg
Dinner... Baked fish with lemon, avocado oil and chili, baked pumpkin, steamed broccoli and carrots, portobello mushrooms and eggplant fried in a balsamic vinegar reduction.
3 strawberries :)

I know what you mean - before I was paleo I was almost vegetarian and never ate beef, and very rarely lamb.

You'll develop a taste for it - in the meantime be sure to -

a) eat chicken thighs and legs, rather than breast, with skin, from slow-reared chickens (which have more fat)
b) fatty pork, e.g. belly
c) add fat to everything.  Make ghee if you can, otherwise just use butter, and add big chunks to your eggs and veggies - although it sounds like you're doing that already.  If you do nightshades, aubergine (eggplant) is great for soaking up grease
d) oily fish.  Forget your cod and your plaice and your haddock.  Go for greasy mackerel, salmon, trout...and then add fat to it.

I didn't like beef because I wasn't allowed it as a child and then tried nasty commercial burgers....yuck.  When I went paleo I started buying organic ground beef and oxtail and suddenly....YUM!

I think my favourite thing to eat now is lamb chops :)

Some of those things still make me shudder lol

Now today I felt a bit out of sorts food wise. I had my eggs for breezy, all good. Missed my morning tea and grabbed a boiled egg later which then kind of put me off lunch, tuna and salad. I only had a few mouthfuls. A mandarin later and then another boiled egg.
Dinner was a craving fulfilled ..made burgers (beef patties), with an egg, onion,a tomato, coconut flour, salt, pepper Yum! Fried in beef lard and then topped with fried tomato and slices of avocado and a fried portobello mushroom also with avocado on top. I've NEVER eaten a burger without bread and it was lovely.
I'm craving chocolate though and trying to resist.

I bought some smoked fresh salmon today on special which I don't really like but someone said to try it with fresh lemon squeezed on it and black pepper. I'll see tomorrow....scared to try it lol.

The weekends camping efforts... Firstly everyone was very understanding and accommodating and it helps now hubby is semi following the diet too.
Friday night dinner...as we were packing and driving I ended up with a quick fried egg before we left and we ate a cooked chook on the way and a couple of boiled eggs.
Sat... Breakfast. Eggs bacon mushrooms tomato.
Lunch was fresh caught fish and we had our fillets put to one side and did them in coconut flour and fried in ghee with pumpkin chips. Smoked salmon wrapped in lettuce with avocado and tomatoes with lime juice and black pepper.
Dinner was coconut curry prawns(shrimp) yummo
Sun  breakfast..scrambled eggs x 3 tulsi green tea
Lunch Lamb chops, fried egg, bacon, tomato, mushrooms (eating this was hard as it was so much fat and breaking old habits are hard)
Dinner..pumpkin and leek soup (the stock wasn't paleo), chicken cooked in butter and garlic with cauliflower, zucchini, and cabbage. Dessert was the chocolate mousse found on here, honey being non paleo of course and I guess the cocoa powder?
Today, eggs scrambled with bacon. 2 boiled eggs as a snack
Lunch, tinned tuna with tomato and cucumber. Coffee with cream :( some cherries and strawberries.
Dinner is going to be pumpkin and leek soup again but using homemade stock this time.
My weight is the same, neither up or down at the moment but my stomach feels flatter?

Um... seriously. It's OK.

I believe that both the dairy and honey (and chocolate mousse) are the poorer choices. But you will deal with it all as you go along.

I think the fruit is preferable.
