8 weeks ago I started paleo. I do not cheat. I go to the gym 4 days per week and I lift heavy. I checked my bodyfat% 6 weeks ago and it was 16.8%. I checked it again 2 days ago and it was exactly the same. I have lost over 8kgs in the 8 weeks. I look a lot different, I have lost my cheeks, I have started to see veins I never had before. I don't understand it

How was your BF% checked?  I have one of those handheld units that measures impedance or something like that.  It is not very accurate but I figure if I use it to track any reduction it would be relative.  I hear calipers are better and water tank may be the best...  You must be building muscle to have the different look.

A significant proportion of the initial weight loss is water weight, which isn't "fat".  The remainder likely amounts to only a couple of percent of overall body weight, which might not show up on most measuring techniques.

Based on your described difference in looks, you are losing fat, though.

I had my body fat done at a gym using one of those impedance machines. At the time I weighed about 159 @ 5'8". My reading was 21%.  Wow.   Many years later, do to going to meetings, potlucks and social gatherings several times a month that always included desert, I was up to 180. When I weighed 180 a nutritionist measured my body fat percentage in her office just prior to putting me on her weight loss program. I measured 19.5% although I was 21 pounds heavier.  I can attest that cupcakes, ice cream and pie do not build muscle so I know it wasn't muscle gain. (especially since I hadn't been to the gym in a couple of years).

A calipers was used by the lady that works in the gym. She took measurements on 4 points on my body, my bicep, tricep, my side and the middle of my back. I have lost alot of weight in areas such as my legs, my behind etc. And yes I hope I am building muscle. I am going to start track running to try lose bodyfat. I would like to get to about 10%.

For most guys, the legs and butt are the first to thin out.  The last place it the torso and gut.  My legs are getting bird thin and I have no butt but my torso is still not where I want it.  While it is looking better, it still holds plenty of unwanted body fat.  We just need to keep at it.  Perhaps I will post a picture after the new year and see where I am with progress...

O.k I got my bodyfat checked today, I am down 2.2% since just before Christmas. I am so happy about that

Congratulations!

Actually, thinking about it, you lost fat in the first 8 weeks, too.  If you stayed at 16.8% body fat but lost 8 kg, then you must have lost 16.8% of 8kg, or about 1.3kg, of fat during that time.  Sorry I didn't notice that before.

I've never had mine checked, but I doubt mine's higher than 15%, possibly as low as 9%. I'm 6'0 and 165 lbs.
