Signs that restaurants have put us on their radar

In our part of Long Island we now have three restaurants that serve spaghetti squash marinara as an alternative to pasta. One is an an Italian place we haven't tried yet. One is the excellent independent place called the Pit Stop. Most interesting, they now have it at the chain restaurant Ruby Tuesday. The manager told us that this has been very well received. Our quiet revolution is moving forward, US News and World Report be damned.

good news :) Did he say why they had done it? Might think they are serving those with wheat allergies for instance.

Cool!  My mom just got back from a trip and was very pleased that one of the restaurants had mashed cauliflower instead of potatoes as an option for those on a low carb diet.

It's smart of those types of places to include options for the growing number of people that can't or won't eat grain for whatever reason.

That's interesting. We shred cauliflower and substitute it for rice, an idea we got from Sisson. I've tried mashed parsnips as a potato sub. I like parsnips anyway, but Donna doesn't and says you can't hide the taste.
