I decided to try eating raw zero carb, which I have been doing for a month and I am feeling great this time, not losing weight because I am eating lots of fat.

Currently I have been rotating eating different organs with meals. I will eat 1 lb. of ground beef, 3-4 ounces of heart or liver, and 7-10 ounces of marrow fat. I want to get a greater variety of organs, but it is difficult to get anything besides liver, heart, kidney and spleen. I have had lung and sweetbreads, thymus, pancreas and like those but can't find a good source. I can't find brains either. I do not like the ground beef as much as I used to and I am considering eating just organs and fat, as I now prefer the organs to muscle meat.

Skeletal muscle is a large part of the animal, and I can't imagine that it would have been neglected as a food source. They are such concentrated sources of certain vitamins and minerals that I'd consider tracking how much of everything you're getting. While it's more common on the standard western diet to be lacking in those areas, it is possible to have problems if you consume too much.Also, heart is muscle, so if you're eating a lot of that it might balance out between organ and muscle.

But I eat it for the CoQ10. I have been eating mostly heart and liver lately, I will be getting kidney and spleen soon. I track everything in NutritionData (http://nutritiondata.self.com/), and the important nutrients are off the charts even when eating more muscle meat than organ meat.As for skeletal muscle meat, I think that paleolithic humans only ate it if they needed to, favoring organs, marrow and brains. What was left over was given to the dogs, which is how we domesticated them. Fresh, raw muscle meat is tough and unpalatable (for humans, not dogs and tigers). That is why it is commonly aged. Fresh organs and marrow are delicious and ready to eat.
