Non-tuber root vegetables are good to go. I make a roasted root veggie dish that even my non-paleo family loves with turnip, rutabaga, carrot, parsnip, beets, a little garlic and onion (sometimes scallion or leek), salt, rosemary and some other herbs, roasted until caramelized. Easy and tasty.
Cruciferous vegetables are known to cause gas and bloating in many people. Try eliminating them for a couple weeks to see what happens. All the meat you are eating is very lean and not very nutrient-dense. You might also try adding (fatty) red meat.

If you think about it in the context of what people in the paleolithic had, you realize that flour would be unlikely, and that the human caloric expenditure to harvest and process coconuts (or almonds, etc.) would be more than the calories they provide, thus either an unlikely food source, or an occasional "luxury". If you are going to eat almond flour, for instance, only eat as much as you would of the whole nuts if you had to pick and shell them by hand. You will soon discover how small the portion is compared to the large amounts of flours in most recipes.

The best thing to do is to divorce yourself from the notion that you need constant variety. Paleo is way easier if you just accept this. If you keep chasing after variety in your diet, you will get on a treadmill that is hard to get off of. It will probably lead to little indiscretions here and there, until you are no longer following paleo. If you are okay with "kinda' paleo", then go for it. But if you are trying to follow a orthodox version, variety is the enemy.

How can you not get sufficient amount of fat from whole foods? Meat, fish, eggs, nuts, seeds, avocados, etc.
Because not all of us can or do eat things like nuts, fish, or avocados and all the fat phobia in our society has made many cuts of meat heavily trimmed before being sold. I can't even find 70/30 ground beef most of the time, or even 80/20 in some stores. In some States, you cannot buy fat trimmings from the butcher (aka suet), so getting sufficient amounts of fat can be difficult, or at the least, inconvenient, for many people. Plus, if you can only get grain-finished meat and want to supplement your diet with fat from grass-fed sources, grass-fed butter (for example) is a fairly easy to obtain source.

Oil is not paleo and I've never heard of any of the "experts" claiming it is.
Most "vegetable" oil is manufactured through a complicated refining process, as is sugar. However, cold-pressed or expeller pressed oil is made using a simple mechanical process. While still not technically paleo, many people supplement their fat intake with cold or expeller pressed oils simply because it's often difficult to obtain sufficient amounts of fat from other sources and these oils are minimally processed.
Remember, the paleo diet is an analogue of an ancient diet, not an exact copy of it. We don't have access to the same exact animal or plant based foods people 10,000 years ago had so all we can do today is simulate it as closely as possible with modern food analogues.
Sorry for forgetting to post an update but it turned out it was because of a new (at the time) blood pressure medication, Losartan Potassium (i.e. Cozaar). My GP insisted that wasn't the cause but as soon as I discontinued the medication the migraines vanished.
Unfortunately, my vision issues never did normalize. I was very slightly nearsighted prior to taking this med. The medication caused near instant Presbyopia, which has never cleared up after all these years, meaning the Losartan did permanent eye damage.
I fired that doctor as soon as I connected the dots. Haven't had a migraine since.

My thoughts? Correlation is not causation.
This is the same bunk "science" that the media promotes to make us all think meat causes cancer, and vegans live longer lives simply because they don't eat meat. What these useless observational studies don't account for is that people who choose to live vegan have generally healthier lifestyles on a whole. In other words, they usually don't smoke, don't drink in excess, exercise, and live in environmentally cleaner habitats. So what part of their lifestyle actually contributes to their statistically longer lives? Nobody knows but to claim it's because they don't eat meat is superficial and irresponsible.
