Diet and nutrition / Questions about buying a 1/2 cow

Since there is a lot of ground beef and it is not fatty, do I need to add fat to the meat or just cook it in a heavy amount of coconut oil? I'm a newb and I'm sure I will be better prepared for next time. Are there any other special considerations I need to take into account? I did ask for bones but nothing else particularly special.

My husbands friend raised the cow but my husband HATES to ask questions. I know they did not use antibiotics or hormones on it but cannot say for sure what it all ate. Gonna enjoy this for what it is but would like to be more educated about what I am buying.

Food Journals / The good, the bad and the ugly

2 Coke Zeros (ugly and bad)
2 Club sodas with lemon
water
3 egg omelette with sauteed onions,mushrooms,garlic,tomato and capicola ham cooked in ghee. Small avocado with lemon juice and lots of Himalayan salt.

snack- celery and almond butter and water

early dinner-plate of celery with guacamole, little sausages and some pork rinds. 2 zeros and water.

late snack- pecans and 3 waters.

Guessing capicola ham was not great but stopped myself from adding cheese. Thought I might come back and edit whatever I have the rest of the day. I have sucked at trying to eat Paleo lately and still can't give up my pop but thought a public food journal might help with a little accountability and noting what works well and what does not. Big grocery trip in a few days and half a cow coming in a week or so.

I drink a ton off bottled water as the water here taste terrible but trying to think if I should be concerned about the plastic, probably funny since I can't seem to stop myself from drinking diet pop.

Other than vitamin C, anything else I can do to speed up recovery or get more energy? I need to wait to do probiotics till after I'm done with the antibiotics, right?

On 2nd course of antibiotics, feel like crap, tired and sore. Trying to do the autoimmune paleo but really missing eggs, peppers, nuts and tomatoes. I just had allergy testing and the only allergy they found was peanuts. Do you think real nuts might be OK or are they also off the AI version because they irritate the stomach, not just cause allergy problems for people?

Been craving fruit but find if I eat it after a meal that it gives me a stomach ache. Had a smoothie from frozen fruit this morning and that seems to be OK.

For energy, the main thing I see here seems to be get enough fat. Anything other tips?

Appreciate any help. Frustrated.

Exercises / Exercise intolerance?

Any advice on if Paleo will help with exercise intolerance? I work on my feet and prefer to stay moving but anything that raises my heart rate or involves bending make me dizzy or nauseous. Had every test imaginable, got kicked out of PT because the trainer said I respond like a diabetic. Using the advice for people with POTS syndrome has helped but not much. WII fit yoga is OK but dull and sometimes it is too much. Am I stuck with just walking?

Any suggestions?

Introductions / Hello from Ohio. New to Paleo

Hello. After desperately searching all day for ways to get through Atkins flu, I ended up here. While I am a huge fan of low carb diets in general my goal is to do Atkins induction to get over cravings then move on to a auto immune paleo plan for awhile.

Gluten free helps me. Atkins help me but now I really need to get somewhere with my medical issues. After 15 years of drugs for RA, they just took away my RA diagnosis and I'm miserable and left with only a UCTD or fibromyalgia diagnosis. Both of which really don't help.

Did atkins before with only mild discomfort but this time its killing me with the headache in the front of my head and across my sinuses as well as general feeling of illness. I had some extra carbs today but even though the side are effects are worse this time, the joint relief is the best I ever gotten from a diet change. I don't need to lose weight at all but I binge eat a lot. Struggling with cravings for all you can eat Chinese, fast food and tons of sweets. Angry whoppers and thin mints, mmmmm.

People gasp at what I eat but I'm a size 4. Really just don't seem to ever get anything from what I eat even when I focus on eating healthy.
Now my 15 year old is having abdominal pain and muscle pain and her recent blood work showed both inflammation and a positive ANA, giving me even more motivation to find answers.

Advice, links, anything. I'm open to it. I know some people really seem to hate Atkins but if I can't get over the addiction to food I have, I.
'm afraid I won't be able to stick it out.
