All they mean is did you eat the fat around the edges or not basically. They probably pulled a set of metrics on the nutrients when someone did NOT eat any visible/chewy fat VS. when someone did eat all of the meat, fat and all.

I buy Sirloin tip side and I ask for it to be extra lean so I think whole foods removes the fat around the edges but there is always a line in the middle of the steak that is fatty. Is that also considered part of the visible fat?
