I hadn't even heard of this recipe until about 6 month's ago. Saw it on Good Eats. Basically its a pork and noodle dish that you can whip up in about 10-15 minutes including cooking the noodles. We were eating this dish about once a week. I made some tweaks over the months to improve it and just to change it up every once in a while. Needless to say my wife and I missed this meal. I decided to make a paleo version.

Here is the link to the Alton Brown version. It does contain soy sauce which I'm not averse to but I guess you could sub coconut aminos if you prefer.  I also switched the cornstarch with arrowroot.

I was hesitant to try spaghetti squash thinking it wouldn't play well in an Asian dish. I had cooked the squash al dente the night before in the oven and drained it as well as possible even squeezing it once in a while. Probably unnecessary. You could probably just lower the amount of chicken broth.   Anyway, I doubled the recipe to use with one large squash.  I also added 2 packages of shiitake mushrooms. I normally add a couple of eggs to scramble in but forgot about them last night. I use sriracha sauce instead of sambal. The final dish was amazing!  so don't be afraid to use spaghetti squash in your Asian dishes!

Publix was all out of spaghetti squash yesterday and I was really in the mood for this dish so I did without any noodles.  Doubled up on the mushrooms and used 1.5 lbs of pork chops run through the food processor.  Also added 3 eggs at the tail end.  Turned out really good!
