Cavekid chicken fingers

Much of my recipes end up on my blog, here is the recipe with a picture:

Cavekid Chicken Fingers

Beat one egg with 1/4 cup of coconut milk, salt (opt), pepper, etc...
Marinade 1lbs of chicken breast cut into strips in the egg mixture for 20m to an hour.

Roll the chicken in flaked coconut (available from bulk bins at your local organi-mart) and set on a drying rack. After a few minutes, give them another dunk in the egg mixture and another roll in the coconut flake.

Fry in approximately 1/2" of coconut oil over medium-low heat until a shade darker than golden brown.. Unload to another clean drying rack and allow to drain and cool before serving.
Diets fail because society as a whole believes body image is more important than health. The problem is that obesity is simply one of many symptoms of an illness, not the illness itself.

And I'm being cured.

this sounds great!  I have not experiemented with coconut milk.....I can' wait to try this ;D
what about almond milk?  Is it Paleo friendly?

Ray Audette's "Paleo Fried Chicken" recipe, IIRC, contains almond flour and almond milk. I can't find commercial almond milk here that is unsweetened (or doesn't contain soy lecithin, or some other frankenfood in it), so I wouldn't know... and it really sounds too fussy to make on my own.

Ray Audette's "Paleo Fried Chicken" recipe, IIRC, contains almond flour and almond milk. I can't find commercial almond milk here that is unsweetened (or doesn't contain soy lecithin, or some other frankenfood in it), so I wouldn't know... and it really sounds too fussy to make on my own.

If coconut milk is safe then I may just stick with that.  When I see things that I think MIGHT be Paleo friendly and I read the label I'm hesitant.  I think I'd rather stick to the basics until I gain more knowledge  ;)

Total fat 3g (0 Trans or Saturated)
total carbs 2g (0 Sugar)
Protein 1g

Tapioca is derived from the cassava root which is toxic unless extensively processed.

I thought there might be a couple things on there that are questionable, but "good lookin' out".  I guess that means no more tapioca pudding either?  :-\
All in all I'll take the almond milk, could easily make your own (sans tapioca) as well if a person has that kind of time.

EDIT: I think it would be better if the almonds were without the skin. You can do that by boiling some water and throwing the almonds in then scoop them out when they start floating, then the skins will slide right off.

wow, seems like a lot of work for some strict paleo-rific almond milk.  Much easier to buy the stuff if you can live with the guilt.  ;)  But sounds like a fun project to do with kids.  I have to keep my paleo-plans to simple, even if that means some compromise.  A person could make a religion out of this if they get too carried away.  Thankfully we were designed to withstand eating lots of garbage and bounce back.  I'm living proof of that.

That's Ray Audette's recipe from Neanderthin. Awful stuff.
