Good lord this was gooood!

This is the first recipe/photo I'll be posting here. I should warn you guys - I don't follow recipes, and I don't tend to keep recipes. My cooking is usually "throw stuff together till it looks good". I don't measure, so I'm sorry if that makes my stuff inconvenient for you.. but I have to share this one!



2-3 handfuls sliced baby bella mushrooms
Some fresh garlic, crushed
1/2 red onion, thinly sliced
2 tbsp olive oil
4 chicken breasts, sliced up
1/2 yellow pepper chopped up
1/2 orange pepper chopped up
1/2 green pepper chopped up
1/2 red pepper chopped up
Some pineapple juice
Some carribean jerk seasoning - check the ingredients, some have salt. Or make homemade, whatever!
1/2 mango chopped up
1/2 orange chopped up

Asparagus
coconut oil

Ok. On the side, we had sliced cucumber and steamed asparagus. I tossed the asparagus with a tbsp or so of coconut oil just before serving.

As for the main dish:

Onion, garlic, and mushrooms in a frypan with a bit of olive oil. Cook a little, just till it starts smelling really good. Add the chicken, cook till the outsides are white. Add a couple splashes of the juice, and as much seasoning as you feel good about. Smell test it till you figure it's strong enough, then toss in the peppers & fruit and cook till it's all done.

Looks great!  Unfortunately, DH and I hate bell peppers though - maybe it would be good with zucchini?  I never measure anything either and I'm always afraid that no one would ever be able to follow the rough recipes I type out, lol.
