Fried sardines and flour coating.

Think I'll try these. Does anyone know why it is usual to dust with flour prior to frying?
Actually this question also applies to meat for casseroles.

Why would you want to use flour? Sardines fried in tallow or grilled are lovely....

I think the point is to "protect" the fish from the heat of frying - it's not needed though
