Good things to do with chicken drumsticks?
« on: July 01, 2009, 07:36:12 PM »
I like to roast them, but what are some good Paleo sauces I can smother them with prior to roasting.

The answer to your question is 'eat more fat'.

Stop counting calories. If you are eating Paleo, there is usually no need.

If you are having weight loss issues, it'd be a good idea to start posting a detailed food journal, then everyone can help.

'Anecdotal Evidence' is an oxymoron.

I usually use a dry-rub on them. garlic & onion powder, cumin, pepper, maybe a touch of sea salt.

Whizz up (or mortar and pestle) the following combos, then marinate and bake:
oregano & lime, or
garlic and lemon, or
mint, coriander and lemon, or
coriander, basil and mint
coriander, garlic, lemongrass and kaffir lime or lime juice
lemon, lime and coconut
add ginger to some of the above if you eat it
ditto chilli (fresh is best)
make a green curry - leave out what you don't eat cos it will still taste good

A can of tomatoes and bake, or tomato and onion or tomato and garlic, or tomato and basiil and garlic

Rub with mustard (dijon), loads of garlic, dukkah (buy or see recipe section), curry pastes (like tandoori without the yogurt, korma with added coconut oil) then bake

Cook with garam marsala and mint (about a tsp of garam to a cup of mint) in a pot (add stock)

The baked chicken soup I put in my meals, or just the chicken soup or just bake it with that stuff.

A bit of water in the bottom of the pan for the stock and dijon mustard also makes a good sauce. Dukkah mixed with juices makes a good sauce. You can actually puree the stock and any of the veg you cook it with to make a gravy (onion and parsnip and/or carrot are very good).

I've just posted a recip for morroccan chicken - two versions
