Is there a Paleo substitute for soy sauce?
« on: June 11, 2010, 03:45:55 PM »
I will soon attempt Paleo sushi, either with egg or quinoa instead of rice. Cooked shrimp with avocado rolled in seaweed, served with pickled ginger, wasabi, and soy sauce. I am not extreme Paleo. A small amount of soy sauce isn't going to make me feel like a failure. Just curious if there is a Paleo substitute. (And there's probably vinegar in pickled ginger. But if the Paleo diet allows small amounts of alcohol, why not vinegar?)

If you really want to there are recipes that use nuts as the rice portion of sushi. But I say make sashimi or roll the cooked shrimp in seaweed instead.

I have never tried this, but I imagine you could take beef stock and boil it down then add sea salt and a small amount of a fruit wine. I think that could be as close as you could get.

Sushi uses a lighter-flavored, sweeter soy sauce, unfortunately these are the ones that contain wheat also. Tamari is one of those that can be made without wheat, but they are heavier and darker, and will overpower the sushi.
Change requires you to scream, I'M NOT GONNA TAKE ANY MORE!...and then you don't.

Ingredients

    * 4 tablespoons beef bouillon
    * 4 teaspoons balsamic vinegar
    * 2 teaspoons dark molasses
    * 1/4 teaspoon ground ginger
    * 1 pinch white pepper
    * 1 pinch garlic powder
    * 1 1/2 cups water

Directions

   1. In a saucepan over medium heat, stir together the beef bouillon, balsamic vinegar, molasses, ginger, white pepper, garlic powder and water. Boil gently until liquid is reduced to about 1 cup, about 15 minutes.

If you're going to the trouble of making sushi, you could see if riced cauliflower - cauliflower chopped to pieces the size of rice grains - works.

Quinoa is not paleo.  It's basically a grain.

Warren beat me to it!  Not Paleo as it is a grain.  Just because it does not sound like one, it still is.
