lamb hash
« on: June 15, 2010, 08:11:02 PM »
made this tonight and it was excellent!

1lbs ground lamb
1/2 onion, grated
1 parsnip, grated
1 carrot, grated
1 large stalk celery, grated
1 large clove of garlic, minced
two large turnips, peeled and cut into 1/2" cubes
3/4ths cup coconut oil or lard (referred to as "oil" in the recipe)

Large skillet, high heat, fry cut turnips until browned in 1/2 (about 3-4 tbsp) the oil (it won't take long), then put them on the side to cool.

With the same skillet empty but still hot, add another 3-4 tbsp of oil, put in the meat and other veggies and cook until onions/celery are translucent. Quite a bit of broth will accumulate, just let it cook off as much as you can.

Remove from heat and stir in the turnips.

Terminate with extreme prejudice.

You could cook everything at once but the turnips would have not browned if they were added in with the other veg, and they would have been overcooked if they were left in for the other ingredients.

P.S. if you cook the meat and veggies in broth, stick it in a casserole and top it with mashed squash puree, it becomes my "Hunter's Pie" (Paleo Shepherd's Pie)
Diets fail because society as a whole believes body image is more important than health. The problem is that obesity is simply one of many symptoms of an illness, not the illness itself.

And I'm being cured.
