Mackerel - It's What's For Dinner.

Last night's dinner: three-egg omelet with kale, mushrooms and smoked mackerel, sauteed in duck fat, with a side of fresh sugar snap peas from the garden.



The only store bought ingredients were the smoked mackerel and the shrooms (and that's only because I forgot about the dried wild oyster mushrooms in the freezer).

Note to self: a little smoked mackerel goes a loo-oooong way.
Fixing my body's broken relationship with food, one healthy meal at a time.

Nice idea. I make a smoked salmon scramble that I love. Eggs and smoked fish go great together. Peas are not Paleo though.
