Mashed potatoes and gravy
« on: September 16, 2011, 07:42:26 PM »
I grilled a couple of ribeyes and had a nice side of mashed potatoes and gravy.

For the mashed potatoesjust cut up a head of cauliflower and steam for about 10minutes. Throw in a food processor with some salt and pepper, ghee, and a couple cloves of garlic. Blend until smooth. I also added a splash of coconut milk and blended a little more. Tasted better than any potatoes I've ever had.

For the gravy, I had to make it up as I went along. Since I didnt fry the steaks I didn't have any steak bits to start the gravy with so i reduced some beef stock down by half then added a splash of coconut milk. I didn't have any arrowroot and didn't want to use flour or cornstarch to thicken it up so i put a few dollups of the mashed potatoes in and it came out surprisingly good. A tad sweet but good.

Wouldn't this be mashed cauliflower rather than mashed potatoes?

Dogma isn't Paleo either. It's quite a Neo construct and is as toxic as gluten.

Dogma? Neo?

I don't see what's not paleo if it was home made beef stock?

Don't mean to labour a point here but I just read through your blog and found all the ingredients in a couple different recipes of yours, so where is the non paleo part?

Technically, the ghee is nonpaleo.  The big question, though, is why would one even want a mashed potato substitute.

Because they get bored of eating the same things? Or maybe they want to experiment in the kitchen? I'm with you on the name change though--call it what it is.

For me, the question is, why are we so nit picky on this forum?  This person was just sharing a great recipe they made, which I greatly appreciate.  Some people eat butter on Paleo.  And just for the record, nothing we eat is technically Paleo because the plants, the soil, the water, everything has changed in the last 10,000 years.  Sheesh...

Because some people take pride in being hardcore about it.

I doubt it's a matter of pride, more of clarity. A lot of newbies step here and wonder if potatoes are paleo, since a recipe with mashed potatoes is posted on a paleo forum I personally am taken to believe they must be paleo! But they are not.

So it's a great recipe, well, it's surely tasty, but I would not post it here, for the sake of clarity, not of being hardcore about it.
I do have a great recipe for a chocolate cake, full of sugar and flour. It's great, really, absolutely delicious. But I wouldn't post it here just because it's delicious, things have their place to fit in.

I understand the need to clarify.  But I have to say, there is a huge difference between posting a recipe for chocolate cake and the recipe here.  We all know that some people eat butter on Paleo.  And, if you actually read the recipe, it wasn't even made with potatoes.  It was made with cauliflower.  Also, people that follow Paleo 4.0 eat potatoes and night shades.
I often don't post because I feel that there are those that are just waiting to spring on me when I do.  It is unfriendly and unsupportive.  Food is like a religion.  You have your way, and I have my way.  If you ask me, I will educate you about my way, but I'm not going to go around dissing what you do/like and trying to convert you so that you are just like me.  I've seen it said a million times on this forum that being Paleo isn't the same for everyone.  Some of us accept that we don't all work Paleo the same way.  Some people are 80/20, some people are 99%.  That's what's so great about Paleo.  You have the freedom to choose how you want to do it.
I understand that people ask for help, and I am all for giving your advice at this point.  However, freaking out at someone because they chose to use butter, which under some paleo umbrellas is fine, is extremely unfriendly. I think what most of us are here for is support.  I don't have support at home.  So I was hoping that this forum could become that support system for me, but it's turning out that that isn't going to be the case.
