Meat cooking methods without Oven or Grill only stovetop

Hi, trying to find appetizing ways of cooking meat without an oven or grill only a stovetop.  Have been doing a lot of braising, any ideas on other methods?

I fry most of my meat.  I have a couple of cast iron frying pans, and I make sure to preheat some fat for 2 minutes before putting the meat in.  For thinner frying pans, preheating takes less time.

I'd vote for cast iron too, but stainless steal works also. Stay away from Teflon or other non-stick.  A deep cast iron pan with a heavy cast iron lid is almost like an oven in it's cooking ability. (For example while camping 20 years ago, long before paleo, someone baked a cake over the camp fire in a cast iron pan with a cast iron lid. I was never that much into cooking to do that. I'd would just pick-up Hostess Cup cakes at 7/11 on the way out if town).

I've done brisket on the stovetop with a stainless steel (copper bottom) pan+lid and it came out nice and tender :)

Braising is good.  Stir frying and pan frying are also favorites of mine.  Stews, chili, etc. can be a nice change of pace, especially during the winter months.

Actually I rarely use the oven.  I fry, grill, or stew!

I flashfry fish fillets and beef patties in a light, non-stick pan (easier to clean!).  Chicken bits or lamb chops are done in a deep cast iron pan - sealed hot first, then lower heat w lid on

I use the oven a lot because I'm cooking for a crowd here, but it's quite possible to get by without. As others have said, cast iron is great. I like Le Creuset casserole dishes - expensive but it lasts forever and is enamel-coated so fairly non-stick, the best for soups and stews.

Why? No oven or another reason?

You can do almost anything with a dutch oven/good fitting casserole or pressure cooker if you add a steaming rack.

Scanpan frypans are the way to go. Thick base, titanium ceramic non stick.
The answer to your question is 'eat more fat'.

Stop counting calories. If you are eating Paleo, there is usually no need.

If you are having weight loss issues, it'd be a good idea to start posting a detailed food journal, then everyone can help.

thanks for all the great feedback!  Yes, I have no Oven in my apt. need to buy a good dutch oven.  Also what are your feelings on a convection oven for cooking meat?

Convection would be better for fish and chicken, in my opinion. For steaks, you could also try a good grill pan - that would be my choice.
