Offal Croquettes

My kids and fiancee refuse to eat liver or other offal.  They freak if I even suggest it.  So, I made these "Beef Croquettes" that they really enjoyed.  Please do not tell them what is in it.  :)

I totally second this (but for the parmesan ;) ) adding liver to meatloaf, meatballs, croquettes...makes them delicious.
