I modified a gravy recipe I found here. I don't really like regular brown gravy, but for some reason I love onion gravy. This recipe turned out surprisingly good, considering the small number of ingredients.

If you're cooking meat, save the drippings to add to the gravy.

Ingredients:

1/2 yellow onion
1 cup beef broth
1/4 cup coconut milk
Black pepper, to taste

Cut the onion into even strips. I made 5-6 slices into the onion, then separated each layer into strips.

Heat some olive oil in a pan, and add the onion strips. Cook over medium-high heat until it's sizzling, then turn the heat down to medium. Cook the onions until they're soft, but don't overcook them.

Once the onions are soft, add the beef broth and then the coconut milk. If you have meat drippings, add them too. Stir until evenly mixed, then let simmer for about 10 minutes. Stir in black pepper.

It might be a little thin, so you can add a paleo-friendly thickener like arrowroot powder, coconut flour or almond flour. I used a little bit of arrowroot powder, but it got kind of gummy and didn't blend with the gravy very well. Coconut or almond flour might work better.
