Protein / energy bars
« on: August 13, 2011, 06:38:54 AM »
Hi guys!
I've just made my own paleo-friendly protein bars, just wanted to share them and maybe get some feedback.
150g almonds
150g walnuts
50g unsweetened shredded coconut
30g goijo berries
Vanilla (I used about 1/4 ts)
1 tbs of cocoa (dark, unsweetened)powder (Is this truly paleo?)
Chop in foodprocessor (semi-fine)

Two solid tbs of cocofat (melt in pan)
Add two tbs of almond butter (homemade)
2 ts of (organic) honey
Mix into the liquid cocofat

Add wet to dry and mix well.

In a "breadbaking" mold put clingfilm, pour your "dough" into mold and even out.
Its  a good idea to cut doug into bar sizes before 30 min in freezer

Now wrap 'em up and keep in fridge for a quick snack or in-between meal!
Keep in mind they must be kept cool to keep texture!

Enjoy! (I do!) :)

Any way you could give us the non metric equivalents for us backwards Americans(like how many cups of walnuts is that?) They look really yummy!

As for cocoa - its a little more processed. I would think carob or cacao would be more like what the northern South American indigenous tribes harvested off the trees and ground into powder. Of course, that's all supposition. I am not an anthropologist nor do I claim to be one. :)

Hi!
I usually measure 2,5(ish) dl to 1 cup.
As for gr to cups... google? ;)
Also Ive been cutting down on the honey (1 ts) to lower carb contents, and have been cutting almonds
measure in half and adding brazil or macademia nuts instead.
They are really easy and quick to make, so have fun experimenting! (and eating  ;))

Thanks a lot!
I was just thinking about it today to make something to snack when on the move. I'll try it out.

Lara Bars
« Reply #5 on: November 07, 2011, 06:12:28 AM »
I found this recipe for energy bars, they sell them as Lara Bars at about $1-1.35 each in the store.

1 1/2-2 Cups pitted dates
1/4 c pecan halves (or walnuts)
1/4 c whole almonds
1/2 tsp cinnamon (optional)

In food processor roughly chop the dates, It won't become paste but will look a little chunky.
Remove dates and put in a bowl, process nuts and cinnamon and pulse until ground up.
Pour nuts in bowl with dates. Wash your hands well, remove your rings and get into it. Smush and combine all the nuts into the dates until distributed evenly.  (It's fun!)
Lightly oil a large glass baking dish and push the mixture into it until it's all spread out as even as possible in a single layer. Cover with plastic wrap and refrigerate (makes it easier to cut), cut into bars and keep refrigerated...make your own variations..this one is Pecan Pie flavor..YUM!

Just a side note, if anyone gets lazy and doesn't feel like making their own Paleo-energy bars, Larabars are sold at most grocery stores and are completely natural and Paleolithic (except for the one's with peanuts in them). They can be quite useful before workouts even though I can't eat most of them because I'm allergic to all tree nuts  :(. Just thought I'd add that to the conversation.

I tried these. Mine didn't come out with the right consistency, but they still tasted really good! I will try again and see if I can't figure out where I screwed up. I am assuming I messed up on the conversion to US. ::)
