I made this tonight for dinner, was absolutely fantastic! Except for the bacon (which I'd forgotten to buy over the weekend) I had all the ingredients already in my fridge and cupboard. The bacon really makes this taste good!

I didn't have a skillet that I was comfortable putting in the oven (all my pans are non-stick coated), so I had a glass Pyrex dish heating up in the oven while I cooked on the stove, and just transferred everything to it when it was time to roast. Came out EXCELLENT.

That actually sounds really tasty. I'll try it but I don't eat potatoes so I'll try carrots, rutabaga, and/or parsnips in place of the potato. Can't wait to give it a whirl!

I'd meant to suggest using root veggies as a sweet potato substitute. Anything roasted in bacon grease and chicken fat will taste good! LOL

Okay, I tried this recipe tonight, with a couple substitutions, and it was pretty good. First, I subbed pumpkin for the sweet potatoes. Actually, this is the reason it took me awhile to try this out, edible pumpkin (as opposed to the decorative kind used to make Jack 'O Lanterns  for Halloween) just started becoming available where I am, and the season is short. But I found a small "sweet pumpkin" today and decided to give it a try in place of the sweet potatoes. I also substituted green chard for the spinach. My wife is allergic to cooked spinach so I needed an acceptable substitute. Chard, with the stalk removed, has a similar texture to spinach when cooked, so I chose that.

Overall, we liked it. I'm not a big onion fan, so I used a sweet onion instead of a plain yellow or white onion. But if I make this again, I will only use half an onion instead of a whole one. I also cooked a whole chicken, cut into 8 pieces, instead of just thighs. I can imagine how savory the combination of sweet potato, bacon, and onion would be, and I suspect the pumpkin wasn't quite as good as a sweet potato, but it was still pretty tasty. Overall, a tasty dish worth making again.

Yum made this recipe and the family loved it . I did replace the sweet potato for carrot which I baked separately as I am in the early stages of this new way of eating and am steering clear of dense carb veggies. Thanks for posting this one.
