Zucchini Recipes Please

Hi everyone,

I recently harvested the last of my zucchini plants and I am literally swimming in them.  I like to use them for omelets and for grilling but I can’t get through them fast enough.  Can anyone please give me some ideas on what to do with all this zucchini?

Lol, towards the end of summer half my zucchini get fed to the pigs. My family likes them sauteed in butter with plenty garlic. I grate them into meatloaf. Ratatouille, kebabs, roast in chunks with plenty fat and put in lunchboxes when cold. Sometimes I make zucchini piccalili (mustard pickles).

When they get a little large on me, I slice them in half length wise and scrape out some of the middle.  Then I stuff them with ground beef, onions, garlic, spices, maybe tomato and peppers that I have browned all together.  Then I bake em in the oven until the zuc is tender.  YUMMY

Thanks for the great ideas.  I just looked up a zucchini piccalili recipe and it looks delicious.  It also looks like it takes some time to prepare so I will save that one for the weekend.  Tonight I will definitely try the stuffed zukes!
