Great that you have found paleo!

I agree with the answers you have already gotten!

Answer to your questions:
1. For breakfast:
- eggs; boiled, fried, scrambled, poached, omelette, however you like them. I also prefer mixing raw eggs with berries, fruits and coconut milk in a blender for a quick breakfast. You can add cinnamon or ginger or something to vary the taste.
- with the eggs you can have meat, fish, vegetables and/or fruit

2. For snack:
- avocado, nuts like macadamia or walnuts, boiled eggs, smoked ham

3. For dinner (as well as lunch):
- meat; lamb, pork, beef, wild game. Steak, ribs, minced, whatever.  You can fry it, or make a stew or however you like it. Fatty fishes like mackerel and salmon is also good.
- with the meat or fish you have a lot of veggies, like cauliflower, broccoli, avocado, carrots, spinach, parsnips, celeriac, beetroots...
- you can have it with your own aioli or mayonnaise, or mash avocado to a guacamole.

I think you are doing great! It can be a bit difficult to find the right proportions of meat, fat and veggies for a meal. You typically eat more meat, fat and veggies when on paleo than you are used to. However that is usually no problem since you are doing without the energy dense grain products. You will get a hang of it.

It is a big difference, when it comes to meat I eat like a double "normal" portion. It is a bit unusual for a woman to eat that much meat and not avoiding fat I know, I have also had the glares, however it is so much better for you than lettuce and croutons. I also like doing my own mayonnaise/aioli to get extra fat, mixing egg yolks and olive oil, some vinegar or lemon juice and garlic. I do eat olive oil however not for cooking, then I use coconut oil.

Veggies you need to fill you up as well and get you some carbs, I love avocado and carrots as well as broccoli and cauliflower, and as you do the stir fry.

If you want a tip on how to use coconut milk you can mix it with berries and fruit for a smoothie.

Alright! That's awesome you want to take the step to paleo eating! As a chiropractor you also act as a model to others.

The next step is to skip the bread and go for meat/fish with veggies, as you know.

A good thing might be to plan your meals ahead and do the shopping so you know what to have for breakfast, lunch and dinner.

It is really that simple, meat/fish with veggies. No fancy cooking needed.

Do you feel you are satisfied after a meal? It can sometimes be hard to find the right size of a portion since you probably might eat more meat and more veggies than you are used to.

Maybe you want to get some additional fat, avocado can be used and coconut like in grated coconut, coconut oil, coconut milk.

What do you think is the biggest challenge with starting with paleo?

I use some almonds and very seldom almond flour.

Well if you want to use it, actually you can use it raw, you don't have to bake it.

One idea is to make a sort of snack, mix almond flour with as much or up to 50% more grated coconut and add some coconut oil and/or water. Then you can roll it to balls and use as a snack.

If you want you can use some for making a raw chocolate cake for a special occasion. Do the same as the snack but instead of balls make a bottom for a cake, and then you mix avocado with cacao powder and orange zest to a cream to spread on the cake. Use goji berries on top if you like.

If you want to make it better in omega6 and omega3 ratio you can mix almond flour with walnut flour (mix walnuts to a flour).

That is quite a journey taking you here! You have been really trying hard finding a solution. I am so glad you found the paleo diet! As you said it makes sense  :) It has helped me a lot loosing weight and feeling great!

Sounds exciting!

You can make sauces, for example based on tomatoes, example: ratatouille, or based on coconut milk. You can make your own mayonnaise or aioli.

I started paleo for more than five years ago. I lost a lot of excess fat and went down two sizes in trousers, and I really enjoy the slim me.

Welcome and good job, I say go strict too  ;)

Coffee is your choice, I don't drink it but I know many do.

Tea is good, especially if green or herbal.
