Introductions / Burp. Oh excuse me!

Hi all.  I started realizing paleo diet made a lot of sense while reading a thread on another forum over the weekend.  The next day I went to the book store to look for the book being discussed, but alas, as I was unable to find it (maybe you might know - there was this chart of common wisdoms versus PD truths, and the author is a ripped middle aged man with 8 pack abs; actually this might not be useful information at all!), I ended up picking up Loren Cordain's book.  BTW is he not well accepted or did I just lurk the wrong threads?

Anyway I am on day four and the switch from grains to veggies has gone seamlessly.  Though to be honest prior to switching I was on a high protein diet (high 100s-200g per day) for my weight (160 lbs, 5'6) because of my weight lifting background.  By steadily cutting out quantities of grain carbohydrates I was able to go from 165 lbs to 135 lbs, then over the past two years I had been slowly gaining the weight back by eating 'clean'.

I had been for months eating a lower carb diet (around 100g) which was mostly made up of oatmeal and light amounts of rice.  I was able to maintain weight gain without increasing body fat percentage, but as it is near summer I was looking for a sustainable way of maintaining any diet.  Since I was consuming 25-30g of grains in one sitting, it was probably spiking my insulin level - I ate often enough to satiate it but the weekends were not fun - I do not eat as much during the weekend as I spend most of it relaxing, so cheat meals piled up.  That isn't going to work for me if I want to be ready by summer.

So here I am.  4th day on the diet.  I switch oatmeal for carrots and for fruits I eat grapes and an orange once every 4 meals.  I might try to wean out of that because once the high sugar fruits go away, I only have a cantaloupe to eat !

I did plug in my diet into a calorie calculator and it figured that I was getting insufficient vitamins and nutrients - because I cannot have milk and whole wheat bread with its fortified vitamins, is it okay to eat a multivitamin, or must I incorporate different foods in my diet?  Also the caloric total was way lower than I thought, consider I was nowhere near hungry until after exercising.

Diet is basically 6-8 eggs per day, about 10 ounces of steak, an entire carrot (large), and a couple cups of grapes.  I definitely need to add more food to this, so last night I had 4 more eggs after dinner.  Or I could also eat shrimp - frozen shrimp is in the fridge.

So anyway I am excited about this - I'm never hungry and it looks like I still undereat which means I can maintain this diet after tweaking a couple of things (calorie intake and nutrients).  Any advice?
